Low Carb GF Kara Paniyaram Recipe

Paniyaram used to be my favourite snack but after I started with paleo, I stopped thinking about them. When I started using coconut flour, I wanted to try paniyaram. Coconut flour is the perfect low carb alternative to all the flours and it is highly absorbent. Instead of one cup of any flour, you need to use only 1/3 cup of coconut flour and the results are perfect. For now I have tried making bread, cake and dosas with coconut flour and they are just too good. This paniyaram was so tasty , I finished off the whole batch in minutes. The recipe is for one serving only, but if you are making it as a snack, then you can serve it for two or three.

 

 

This recipe uses eggs. From what I have made, eggs and coconut flour go well together. As I am not into eggless cooking, I am not doing any experiments for now. For me paneer would be the best egg free option, but you need to do a little experiment on how much flour to paneer. I have added some onions and coriander leaves, but feel free to add any vegetable you want. Carrots, cauliflower, bottle gourd are some of the variations you can make to this dish. Ingredients:

Coconut Flour – 2 tbs

Salt – to taste

Eggs – 3

Pearl Onions – 3

Coriander leaves – 2-3 tbs

Ghee – for cooking

 

Procedure:

In a bowl combine all the ingredients together to make a smooth batter.

Heat the paniyaram pan and grease the moulds with ghee.

Add batter to the moulds.

Once the bottom is done, flip them.

Cook until the paniyaram is completely cooked.

Remove from pan and serve them hot with a chutney of your choice.
