Cloud Bread – Easy Paleo Recipes

I have been thinking of making cloud bread ever since I started eating eggs, but looking at the lengthy process, I always postpone. But still I wanted to post it for the BM and did it on one fine day. I should say this one is an awesome low carb bread you can make. It is so airy and super soft, it can be served with any curry for a filling meal. Usually they make it like a disc, but I wanted to bake it in a muffin pan. When I tasted the first bread, it felt like I was eating a super soft idli. It has been nearly 7 months since I had idli and you can imagine my joy when I could taste idli in the cloud bread. I had it with tomato sauce and the breads were disappearing too fast from my plate. Then I also tested it with kefir. Kefir tastes just like curd, and so the combination of the bread and kefir reminded me of dahi vadas. Again I was on cloud nine. I finished off all my breads within 5 minutes and it was super filling.

 

 

The secret of getting a nice bread is in beating the whites and folding the batter. If you over mix, all the air in the egg whites will be gone and you may not get the result. So this recipe needs some technical knowledge. And will I make it again? May be once in a month. I prefer quick recipes than all these technical recipes. But since it is too delicious, I will be making it atleast once in a month. You can pair this with any spicy chutney you want to make it a South Indian meal substitute.

 

 

Ingredients:

Egg – 4

Cream Of Tartar – 1/4 tsp

Cream Cheese – 2 tbs

Salt and Pepper To Taste

Italian Seasoning – 1/2 tsp

 

Procedure:

Preheat oven to 200°C.

Crack the eggs and separate whites and yolks.

To the whites add cream of tartar and whip until they form stiff peaks.

To the yolks add the cream cheese, salt, pepper and Italian seasoning and mix it well.

Add some whipped egg white to the yolks and whisk until smooth.

Now pour the yolk mix to the remaining whites and gently fold until you get a uniform batter.

Now divide the batter between 12 muffin moulds. Line the mould with paper so that it becomes easier to remove.

Bake for 30 – 35 minutes until the top is golden.

Serve it with a side dish of your choice.

Wow that’s super looking dish with eggs Gayathri…I am sure it must have been very good..yea everyday simple dishes are good, but you need to make some complex and challenging ones too right..Glad your site is back in service!..and yes I was thinking of suggesting to remove the ingredient link..:)

  2. I’ve read so much about cloud bread but have always wondered about the overall taste. The cloud bread you’ve prepared looks really good and I like the look of the texture too.
