Milk and Chia Seeds Popsicle

When I was thinking of another popsicle recipe, I remembered the pack of chia seeds which Priya gave during a meet. So I combined the milk pospsicle recipe with some chia seeds and thus a delicious popsicle resulted. But before going into the recipe, I would like to share with you the day’s incident when I made these popsicles. I had both chia seeds and black poppy seeds in my fridge. I even had written down on the pack as chia seeds as I know I would become confused. That day, when I prepared the milk mix and I went to bring the chia seeds. I completely forgot about the pack written as chia seeds and brought with me a pack of black seeds. My mind was else where and was completely blocked, I think. I added a table spoon of the seeds to the milk and let it sit for 10 minutes. When I returned back, the seeds were the same size and I was confused. Only then my mental block cleared and I saw my mistake. I have added poppy seeds instead of chia seeds. I then filtered the milk and added chia again and let it set in the kulfi moulds. So learn from my mistake. Do not add anything before you are 100% sure about the ingredient.

Coming to the final popsicle, I was 100% sure that my daughter will not taste it after looking at those black seeds studded on top. So I removed just one popsicle from the mould and asked her to give it a try. If she rejects, at least I can enjoy it. But she just loved it and I had to remove one more popsicle from the mould. In fact, she and hubby took turns in finishing off the entire batch.  Chia seeds are very healthy and I was so happy that I could make my daughter relish it. When it comes to photographing ice creams and popsicles, my mind goes really blank. I was out of ideas when taking the photos. So bear with the normal photos. Whatever the photo looks like, this was one delicious frozen treat which was loved by all.

Ingredients:

Milk-2 cups

Corn Flour-1 tbs

Condensed Milk – 1/2 cup

Cardamom Powder-1 tsp

Chia Seeds – 1-2 tbs

 

Procedure:

Reserve 1/4 cup of milk.

Bring the remaining milk to boil.

Add corn flour to the reserved milk and mix well.

Add it to the boiling milk and keep on stirring.

Add condensed milk and cook until the mixture becomes little thick.

Remove from flame and add cardamom powder and chia seeds.

Allow it to cool completely.

Fill popsicle moulds.

Freeze for a minimum 8 hours.

For serving, place the mould below running water for 20-30 seconds and then pull the popsicle out of the mould.

Serve immediately.

  1. Lol, Gayathri!! I make that mistake all the time.. Popsicle looks very nice and even I struggle photographing beverages and ice-creams. And these are the two I don;t blog that often and whenever I do, I am blank.

  2. lovely looking popsicles 🙂 I have that panicky moments between kalonji (onion seeds) and black sesame seeds , between milagu (whole black pepper) and manithakkalli (dried ones) , so can understand…. these look kid-friendly too 🙂

  3. What a lovely idea to add chia seeds to popsicles. LOL on adding poppy seeds instead of chia seeds — I can see myself doing that 🙂
