This year I have a resolution which I want to keep. I need to take part in Blogging Marathon all the 12 months. I don’t know whether I can keep up that resolution but I will try hard. Last year I have been so irregular in taking part and I really miss my regular blogging. If life is good this year, I am sure I will keep my word. For the first week of BM this month, I chose to do healthy recipes perfect for diabetics. Whenever I am given a choice between desserts and healthy recipes, I usually opt for desserts. But this year I will be doing more of healthy cooking and this seems like a great start.
Millets are nowadays very famous and I personally use a lot of millet in day to day cooking. When I went to the farmer’s market today, I saw a small stall selling home made and millet products. The first pack that caught my eye was the millet noodles pack. When I read the ingredient list, I was quite interested as it was full of millet flours. Combined with this week’s theme, it would make a great diet recipe. So I bought home a pack and tried with my usual noodles recipe. It came out so nice. The taste was absolutely fine and my daughter devoured a plate of this noodles. Made with very little oil, this is a perfect diet recipe. You can use any vegetable you have in your pantry. You can even add sautéed tofu or paneer. The combinations you can get are endless.
Ingredients:
Millet Noodles-1 pack / 180gm
Oil-1 tsp
Garlic – 2-3 pods, thinly sliced
Onion-2
Green Chilly-2
Cabbage / any vegetable combined -1/2 cup
Green Chilly Sauce-1 tsp
Soy Sauce-1tsp
Tomato Sauce-2 tsp
Black Pepper Powder-1/4 tsp
Salt-to taste
Coriander leaves/ Green Onions – 3-4 tbs
Procedure:
In a large pan bring water to boil and add the noodles.
Let it boil for 5 minutes or until done.
Pour the noodles in a sieve and wash it over cool water to stop cooking.
Allow it to drain.
In a pan heat oil and add garlic. Sauté for a minute and then add onions and green chillies.
When the onions turn translucent, add cabbage and let them fry for a minute or two.
Add in the sauces and salt. Mix well.
Add the drained noodles and mix gently so that all the spices mix well.
Remove from flame and garnish with coriander leaves.
Serve hot with tomato sauce.

i have eaten sevai from navadhanya millet flour, but noodles with the same looks like a nice idea 🙂 I am going to hunt for those healthy packets now 🙂

So yummy! This time during the trip to India, my kids ate noodles at a restaurant and loved the Indianized flavors. Your recipe looks very close to what they ate. Using millet is such an healthy option to make kids favorite.
I am sure they taste wonderful but I am yet to see these noodles in the store shelves here!
