Vengaya Thool Pakoda

Today is the first day of Blogging Marathon#20. I am posting recipes with theme cooking with onions. The first recipe which came to my mind was vengaya thool pakoda. Thool pakoda doesn’t have any shape. The onions are nicely caramelized and it gives a sweet flavour to the pakoda. This makes a nice evening snack along with a cup of coffee. Fried cashew nuts add an extra crunch to the pakoda. This tastes great when served hot. So prepare as much as needed.

Ingredients:
Onion-2
Besan/ Chickpea Flour-1cup
Rice Flour-3tbs
Salt-to taste
Green Chilly-3-4
Hot Oil-2tbs
Cashew Nuts-2-3tbs
Oil-to deep fry
Procedure:
1. In a bowl add besan, rice flour and salt.
2. Heat oil and add it to the flour mixture.
3. Mix well using a spoon.
4. Add thinly sliced onions and green chillies.
5. Add 2-3tbs of water to make a clumpy dough.
6. Heat oil.
7. Sprinkle the onions into oil.
8. Fry until golden.
9. Finish with all the onions. Add cashews to the oil and fry until golden.
10. Add it to the pakodas.
11. Serve hot.
