Spinach Puree

Palak puree is used in many dishes. Palk Paneer, Palak Chole, Plak roti, Palak Paratha, Palak rice are some of the dishes using the puree. Making puree is very easy. If you have fresh palak at hands, do not hesitate to prepare this colourful puree. This when used in rotis and puris impart a nice colour to the dish. My daughter likes the green coloured rotis. So I can easily sneak in this nutritious green in my daughter’s diet.
A bunch of palak produces half a cup of puree. So buy according to your need. Choose fresh and green leaves.
Cut off the stem and wash it three times.
Add 1/2cup of water and bring it to boil.

Switch off stove and close the lid for 10minutes. The leaves will wilt by the time. Drain the water. Do not discard water. You can use it to make chapathi dough.

Grind the leaves to a fine puree using 1/4cup of water.
