Carrot Beetroot Chutney

This is a nutritious chutney. As my daughter doesn’t take vegetables to school, I need to sneak it in her diet. I give this with her morning dosa and she can get the benefit of both the vegetables. The colour is vibrant because of the beetroot used. The chutney tastes great with idli or dosa. I also make a rice with this chutney. The recipe is in my other blog.

 

 
Ingredients:
Carrot-3
Beetroot-1
Onion-2
Tomato-1
Green Chillies-4-5
Oil-2tbs
Mustard-Urad Dhal-1tsp
Garlic-3-4pods
Coriander Leaves-1/4cup
Salt-to taste
Procedure:
1. Cut beetroot and carrot into small cubes.
2. Heat a tbs oil and add the garlic. Saute for a minute.
3. Then add onion and green chillies.
4. Saute until golden.
5. Add carrot, beetroot and coriander leaves.
6. When the leaves wilt, add the tomato and salt and cook on low flame until the vegetables are cooked in the juice of tomato. If it sticks, sprinkle a little water.
7. When the vegetables are soft, remove from flame and allow it to cool.
8. Grind it into a paste in a mixer grinder without adding water.
9. Heat remaining oil and add mustard-urad dhal.
10. When they crackle add it to the ground chutney and serve.

    I drink Carrot beetroot raw with all other veggies and I do detox everyday with fresh ginger.

    I love this chutney.. Found a different recipe now.. I love Garlic but will add ginger too..
