Potato and Methi Leaves Stir Fry

This is a simple masala which goes well with rotis. We had this as a  side dish with rice. Just loved the combination. Long days back I tried this with raddish leaves. Even that tasted great. 



Ingredients:
Potato-250gm
Methi Leaves-1cup
Cumin seeds-1tsp
Red Chilly Powder-1tsp
Turmeric powder-1/2tsp
Salt-to taste
Oil-2tbs
Procedure:
  1. Cut potatoes into small cubes.
  2. Heat oil in a pan and splutter cumin seeds.
  3. Add potatoes and stir it so that it doesn’t stick to the bottom. Switch flame to low while stirring potatoes otherwise it is sure to turn black.
  4. After the top layer of potatoes has become a little brown add salt, tumeric powder and red chilly powder.
  5. When the potatoes are golden brown add the methi leaves.
  6. Stir it till the methi leaves are cooked.
  7. Transfer to a serving dish.
  8. Serve with rotis, chapathi or rice.
