Vatha Kulambu Podi is a spice powder used in preparation of Vatha Kulambu. This is a very aromatic powder which has coriander seeds, red chillies and other spices. The powder can be prepared in large quantities and can be stored for a whole year. But the ingredients I have given renders 1 1/2cups of the spice powder and can last upto 3-4 months for a 3 member family. I will also give the measurements needed for the whole year. My mom used to prepare this podi and she has a book in which she refers for the quantity of ingredients. Even I have referred the same book.
Ingredients:
For 1 1/2cups of Spice Powder:
Red Chilly (Milagai Vatral)-50gm
Coriander Seeds (Kothumalli Vidai)-6tbs
Rice (Arisi)-1tbs
Urad dhal (Ulundhu)-1tbs
Mustard Seeds (Kadugu)-1/2tbs
Black Pepper (Milagu)-2tbs
Cumin seeds (Cheeragam)-1tbs
Toor Dhal (Thuvaram Paruppu)-1tbs
Methi Seeds (Vendhayam)-1/2tbs
For Storing Spice Powder For One Whole Year:
Red Chilly (Milagai Vatral)-1.4kg
Coriander Seeds (Kothumalli Vidai)-600gm
Rice (Arisi)-100gm
Urad dhal (Ulundhu)-100gm
Mustard Seeds (Kadugu)-50gm
Black Pepper (Milagu)-200gm
Cumin seeds (Cheeragam)-100gm
Toor Dhal (Thuvaram Paruppu)-100gm
Methi Seeds (Vendhayam)-50gm
Procedure:
1. Roast all the ingredients separately until golden and crisp.
2. Grind every thing together to a fine powder.
3. Store in air tight jar.
