Andhra Punugulu Recipe

For today’s post I wanted to feature an Andhra Pradesh snack. I am blogging this whole month along with my friends for the Buffet On Table. Every week, there is a theme to be followed and for the second week it is Indian states. I am doing savoury snacks from six states. Today it is Andhra’s turn and I selected a very simple recipe. Punugulu is made with dosa batter and is a popular street food. The only way we can select recipes is by going through blogs. When I was searching for recipes, I came across so many versions of punugulu. Some used fermented dosa batter, while some used freshly ground batter. While some added rice flour and sooji, some didn’t add. So I just made a version which was convenient for me.

Though the name is new to me, this snack kindles joyous child hood memories. Whenever we are short of snacks, mom used to whip up this in moments for the after school snack. After growing up and marriage, I just forgot about it until today. While tasting, I remembered Mom and all those happy days which I am missing a lot. If you have dosa batter at hand, this snack hardly takes 10 minutes to make. Heat oil and by the time it heat, slice the onion and green chillies and just drop the mixed batter and fry. Serve it piping hot with any chutney of your choice. It tastes absolutely delicious.

Ingredients:

Dosa Batter-1 cup

Onion-1

Green Chilly-2

Coriander LEaves-2 tbs

Sooji-1 tbs

Rice Flour-1 tbs

Salt-to taste

Oil-to deep fry

 

Procedure:

Take batter in a bowl.

Add onions, green chillies, coriander leaves, rice flour and sooji.

Add salt to taste and mix well.

Heat oil in a frying pan.

Scoop out batter in your fingers and drop them into tiny portions in hot oil.

Fry until golden brown.

Serve hot with chutney.

  1. I remember these bajji. I forgot what these are called and even my aunt use to make these when we were growing up. Nice snack with dosa batter.
