Raw Mango Leather

  • Raw Mango-3 medium sized
  • Water-1/2 cup
  • Sugar-1/2 cup
  • Green Food Colour-a few drops

Procedure

  • Wash and wipe mangoes.
  • Cut them and discard the seed.
  • Chop them and grind to a fine paste with 1/2 cup of water.
  • Pour it into a sieve and collect the pulp. Discard the coarse pulp.
  • Now put it on stove and add food colour and sugar.
  • Let it boil and reduce to a thick spreadable mixture.
  • Line and grease a 9" * 13" tray and pour the mango mix on the tray.
  • With a spoon spread it out evenly.
  • Set the temperature to the lowest setting in oven.
  • Place the tray in the middle rack and let it bake for 4 hours.
  • Remove from the oven and peel away the baking paper.
  • Flip the mango leather on to another greased paper. There would be some soft spots left which might be sticky.
  • If there are such spots, then return it back to oven and let it completely dry. It should no stick to your fingers.
  • Now switch off oven and allow the leather to cool completely. I just left it overnight.
  • The next day, Cut the leather into 1" stripes along with the paper, roll them up and store.
  • I left two rolls for more than 3 weeks and they were good as the fresh ones.
  • So store in airtight jar and enjoy as you go!!
