- Wash and wipe mangoes. 
- Cut them and discard the seed. 
- Chop them and grind to a fine paste with 1/2 cup of water. 
- Pour it into a sieve and collect the pulp. Discard the coarse pulp. 
- Now put it on stove and add food colour and sugar. 
- Let it boil and reduce to a thick spreadable mixture. 
- Line and grease a 9" * 13" tray and pour the mango mix on the tray. 
- With a spoon spread it out evenly. 
- Set the temperature to the lowest setting in oven. 
- Place the tray in the middle rack and let it bake for 4 hours. 
- Remove from the oven and peel away the baking paper. 
- Flip the mango leather on to another greased paper. There would be some soft spots left which might be sticky. 
- If there are such spots, then return it back to oven and let it completely dry. It should no stick to your fingers. 
- Now switch off oven and allow the leather to cool completely. I just left it overnight. 
- The next day, Cut the leather into 1" stripes along with the paper, roll them up and store. 
- I left two rolls for more than 3 weeks and they were good as the fresh ones. 
- So store in airtight jar and enjoy as you go!!
