Wash and wipe mangoes.
Cut them and discard the seed.
Chop them and grind to a fine paste with 1/2 cup of water.
Pour it into a sieve and collect the pulp. Discard the coarse pulp.
Now put it on stove and add food colour and sugar.
Let it boil and reduce to a thick spreadable mixture.
Line and grease a 9" * 13" tray and pour the mango mix on the tray.
With a spoon spread it out evenly.
Set the temperature to the lowest setting in oven.
Place the tray in the middle rack and let it bake for 4 hours.
Remove from the oven and peel away the baking paper.
Flip the mango leather on to another greased paper. There would be some soft spots left which might be sticky.
If there are such spots, then return it back to oven and let it completely dry. It should no stick to your fingers.
Now switch off oven and allow the leather to cool completely. I just left it overnight.
The next day, Cut the leather into 1" stripes along with the paper, roll them up and store.
I left two rolls for more than 3 weeks and they were good as the fresh ones.
So store in airtight jar and enjoy as you go!!
