Paleo Mushroom Pulao Recipe

  • Cauliflower - 1 large
  • Mushroom - 200 gm
  • Ghee - 2-3 tbs
  • Cinnamon - a small piece
  • Star Anise - 1
  • Fennel Seeds - 1 tsp
  • Clove - 2-3
  • Salt - to taste
  • Onion - 1
  • Coriander Leaves For Garnish

To Grind

  • Tomato - 1
  • Red Chilly Powder - 1 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Ginger Garlic Paste - 2 tsp
  • leaves Coriander- a handful
  • Mint Leaves - a small handful
  • Turmeric Powder - 1/2 tsp

Instructions
 

Procedure

  • Grind all the ingredients in a mixer jar using very little water.
  • Add cauliflower florets and salt to hot water and let it sit for 10 minutes. Drain water.
  • Grate cauliflower or run it in a food processor until it resembles rice.
  • Either MW the rice for 10 minutes or steam cook in an idli pan for 10 minutes. Set aside.
  • In a pan, heat ghee and add spices.
  • Add onion and saute until it is golden.
  • Add in the prepared paste and saute until it starts leaving ghee.
  • At this stage add the mushrooms.
  • Cook for a minute or two.
  • Add salt to taste.
  • Now finally add the prepared rice, give a nice mix and remove from flame.
  • Serve it with cucumber / raitha / omelette.
