Grind all the ingredients in a mixer jar using very little water.
Add cauliflower florets and salt to hot water and let it sit for 10 minutes. Drain water.
Grate cauliflower or run it in a food processor until it resembles rice.
Either MW the rice for 10 minutes or steam cook in an idli pan for 10 minutes. Set aside.
In a pan, heat ghee and add spices.
Add onion and saute until it is golden.
Add in the prepared paste and saute until it starts leaving ghee.
At this stage add the mushrooms.
Cook for a minute or two.
Add salt to taste.
Now finally add the prepared rice, give a nice mix and remove from flame.
Serve it with cucumber / raitha / omelette.
