In a MW safe bowl mix together white chocolate and condensed milk.
Heat it on medium for 20 seconds.
Give a nice stir and repeat the 20 second bursts until the chocolate is completely melted and forms a nice fudge.
Remove from oven and add the essence, cherries and cut fruits.
Give a nice stir.
Line a 5" square tin with aluminium foil and grease it with oil.
Pour the fudge inside and allow it to cool completely.
Cover with cling film and refrigerate over night or until set.
Slice it into cubes and refrigerate in air tight jar.
