Eggless Whole Wheat Morning Glory Muffins Recipe

These fruit and carrot loaded muffins are so soft, moist and delicious. Made with whole wheat flour and oats, these are perfect to enjoy for breakfast.

Ingredients
  

  • Whole Wheat Flour - 3/4 cup
  • Rolled Oats - 1/4 cup
  • Baking Soda-1 tsp
  • Cinnamon - 1/4 tsp
  • Ground Ginger - 1/4 tsp
  • Salt - 1/4 tsp
  • Grated Carrot - 1 cup
  • Grated Apple - 1/4 cup
  • Grated Coconut – 1/4 cup
  • Chopped Walnuts - 1/4 cup
  • Sunflower Seeds - 2 tbs
  • Mashed Banana - 1/3 cup
  • Coconut Oil / Melted Butter - 1/3 cup
  • Coconut Water / Fresh Orange Juice - 1/3 cup
  • Yogurt / Curd - 1/2 cup
  • Vanilla- 1 tsp
  • Tutti Frutti / Dry Fruit - 1/4 cup

Instructions
 

  • Preheat oven to 175C.
  • Mix together wheat flour, oats, baking soda, cinnamon, ginger, sugar and salt.
  • Add in carrots, apple, coconut, sunflower seeds and walnuts and mix well.
  • Add in mashed banana, juice/ coconut water, oil/melted butter and yogurt.
  • Gently fold the batter.
  • Add tutti frutti or any other dried fruit and gently mix.
  • Line a 12 cavity muffin tray with paper liners.
  • Divide it between 12 muffin liners.
  • Bake in preheated oven for 20 - 25 minutes.
  • Remove the muffins from oven when a toothpick inserted comes out clean.
  • Cool on wire rack and serve.
