Garlic Chilly Cheese Toast is a crispy baked toast topped with a delicious garlic herbed butter, three cheeses and sliced chilly.
If you follow me in social media, you might have known about my weekly sourdough bread baking. I regularly bake sourdough breads to experiment with the timings and recipes and always end up with some slices in my bread box on the daily basis.

Made cheese chilli garlic toast recipe for breakfast
One of our favourtie way of eating the sourdough bread is to toast it and spread some peanut butter and jam or jelly. When I grated three blocks of cheese, I wanted to incorporate it in our breakfast. So this chilly cheese open sandwich.
Grating the Cheese the easy way
Usually I hate the cheese grating, because it gets stuck to the grater, will become soft and mushy by the end. To avoid it, I have been using my food processor grater attachment lately. It makes the work too easy. You can grate 600 gm of cheese in just five minutes and the major advantage is that the cheese won’t turn mushy and stick to the grater attachment.
I even read somewhere that when you apply a slight coat of oil on the grater, the cheese won’t stick. But I didn’t do it. I had three packs of cheese – Mozzarella, Cheddar and Parmesan. Refrigerate it overnight. Do not freeze.
Set the food processor with the grater attachment and keep it ready. Slice each cheese block to four sticks. Take one parmesan, one mozzarella and one cheddar stick and place it into the feeding tube. Switch on the processor. You get mixed grated cheese in minutes. Repeat with the other sticks too.
Transfer the cheese to a box and freeze it. Whenever you need cheese, take it out of freezer and let it thaw. Take the portion needed and freeze it again. It stays good for months like this.

Garlic Chilly Cheese Toast – Seasning
I just made it easier by adding the garlic seasoning to the butter instead of roasting the garlic. This is one of the quickest breakfast recipes I have tried and I was really glad that I tried. The crunch and spice from the chilly, the creamy cheese on top and the flavourful butter added so much to the sandwich.
You don’t have to limit the sandwich to just sourdough breads. The softer slice from a sandwich loaf also would taste amazing. You just need to adjust the baking time depending on the type of bread.

Baking the cheese chilli garlic toast can be customized as per your liking. 10-12 minutes gives you a crisp sandwich. If you want it softer, then reduce the time to 6-8 minutes. Keep the temperature at 250C so that the cheese melts fast retaining the softness of the bread.
Garlic Chilly Cheese Toast – Cooking on stove
You can also use your stove to cook this toast. Use a heavy bottomed pan, set on medium low flame. Add some butter and place the prepared bread slices on it. Cover the pan and cook until cheese melts. Adjust flame so that the bottom doesn’t burn.

Serve the sandwich hot out of oven. It tastes best when served hot. I don’t usually pack cheese recipes in lunch box as it dries out. If you can reheat in MW, then go ahead and pack it in your lunch box. Otherwise, enjoy it piping hot out of oven.

Garlic Chilly Cheese Toast
Ingredients
- 4 Bread Slices
- 2 tbs Butter
- Dried Parsley
- Garlic Bread Seasoning
- Salt
- Grated Cheese
- Chopped Green Chilly
Instructions
- Preheat oven to 200C.
- Mix together butter, garlic bread seasoning, parsley and salt.
- Apply it evenly on the bread slices.
- Add chopped green chillies as per taste and top it with grated cheese.
- Place the tray on top rack and bake until cheese melts and slightly changes colour. 10-12 minutes.
- Serve it hot out of oven.
