If you have followed my blog for a while, you might know that I love milk based sweets. That too I have a soft corner for paneer based sweets. I once did a month long Indian milk sweets marathon with nearly 80% sweets with paneer. I have been making sweets every week for my YouTube channel. It is for thew Thursday and this week, I wanted to make one of my favourite laddus. I have made malai laddu previously, but with some added colour, but this time, didn’t add any colour to it. The sweet has malai paneer and condensed milk as the main ingredients. And it gets ready in a jiffy, if you have made paneer on the previous day.
This time, I decided to dip the laddus in pistachio powder. But you can go for any topping you want. Also you can do it without any topping too. The condensed milk can either be store bought or can be home made. If you haven’t yet seen my home made condensed milk, this is the perfect time to see how easy it is to make. Do take a look at the video to know the exact consistency of the mix. Ingredients:
Milk – 1 litre
Amul Fresh Cream – 100 ml
Vinegar – 2-3 tsp
Sweetened Condensed Milk – 200 ml
Saffron a few strands
Cardamom Powder – 1/2 tsp
Ghee – 2 tbs
Powdered Pistachios
Procedure:
In a pan, mix together milk and cream and bring it to boil.
Once it boils, remove from heat and add vinegar and mix until the whey separates.
Pour this in a cloth lined sieve and allow it to drain for 30 minutes.
Remove the paneer and transfer to a mixer jar.
Add condensed milk and cardamom powder and grind until it forms a smooth paste.
Heat a pan and add ghee.
Pour the ground mix into it and add saffron.
Keep stirring until the mixture thickens and leaves the sides of the pan.
Remove from heat and allow it to cool.
When it is slightly warm, knead it well to make a smooth dough.Pinch small portions, roll into a tight ball, dip one side in pistachio powder and arrange on a tray.
Allow it to air dry for one hour.
You can then serve it or store in refrigerator.

Malai Laddu Recipe
Ingredients
