How did you like the Cashew Cookie Butter I posted yesterday? That was so easy to make, right. And it is so yum too. My daughter would vouch for it. I have chosen Cookie Butter as my theme this week and will post three recipes for the consecutive days. As I used store bought cookies yesterday, I decided to make it with home made cookies today. I made all the cookie butters on a single day and served them along with toasted bread slices for Sruti’s lunch. As she is on holidays, I have been making so many yummy lunches for her which she usually misses during her school days. Let her have fun until the end of this month and then her school lunch starts and then my life would become easier! Hahahah!
Today’s recipe is on the healthier side and the consistency is chunky. I like chunky peanut butter and anything that has chunky nuts in it. So when I decided to make the butter with peanut oats cookies, I also decided to make it chunky. To make this butter, I reserved a few Oats Peanut cookies I made last month. As I mentioned, it is healthier than yesterday’s recipe. For fat I have used coconut oil. The almonds and peanuts make the butter so nutty and oats make it healthy. The cookies are made at home and require only three ingredients. No butter or oil involved. So go ahead and make the cookies and the butter and enjoy!
Ingredients:
Peanut Oats Cookies – 4
Roasted Peanuts – 2 tbs
Roasted Almonds – 10
Salt – a pinch
Coconut Oil – 1 tbs
Milk – 2-3 tbs
Procedure:
Add the cookies along with nuts and salt in a mixer jar.
Run until the mixture is coarse.
Transfer to a bowl and add the coconut oil and milk.
Mix well and transfer to a jar.
Keep it refrigerated.

I wanted to make cookie butter with homemade cookies but didn’t workout. I do want to try it next time I bake some cookies at home. As for Sruthi’s holidays, it is fun doing stuff during the holidays, isn’t it? Last May I was in India and had a good time with my nephews.
