For the third day, I have one more low carb recipe which can be served for two. I was planning recipes for Sruti this week, but with so many personal works going on, I couldn’t do any of them. So I decided to use my drafts this week and I am pretty pleased that I had all the recipes. Check out my Egg Paneer Halwa and Egg Manchurian which I made for two (click on the names for recipes). Here is one recipe I make for breakfast. Just like all the low carb recipes, this one is also so easy to assemble and cook. You can use either an OTG or a MW to bake these cuties. I prefer MW because it gets ready in two minutes, but if in OTG, it might take 20 minutes to bake excluding the preheating time. Though I love OTG dishes, I need my breakfast to get ready in minutes as I will be breaking my fast of 18 hours.
The recipe doesn’t have any added fat, because the cheese it self has fat in it. If you are following keto or paleo, it is better to check the nutrition of each and every ingredient that goes into the dish. That is the only reason I like to keep them simple. Nothing fancy means no extra calories included. You can add spice to the dish to make it interesting. As we don’t calculate the calories for basic spices, choose whatever you like. I use Italian seasoning sometimes, chaat masala or just pepper and salt sometimes. That depends on the mood of the day. But adding the cheese gives these muffins a really nice flavour and the eggs make it so fluffy.
Ingredients:
Egg – 4
Mozzarella Cheese – 30 gm
Salt and Pepper – to taste
Grated Carrot – 2 tbs
Italian Seasoning – a pinch
Procedure:
In a bowl whisk the eggs.
Add all the other ingredients in the list and whisk until well combined.
Divide it between four silicon liners.
MW on medium high for 2- 3 minutes.
Serve them hot.

Mozzarella Egg Muffins Recipe
Ingredients
- Egg - 4
- Mozzarella Cheese - 30 gm
- Salt and Pepper - to taste
- Grated Carrot - 2 tbs
- Italian Seasoning - a pinch
