We are at the beginning of a new month and as usual, I have four interesting themes lined up for the weeks. For the first week, the theme is morning dishes. So what are morning dishes? When I googled it, it showed me various breakfast recipes, but the rule is the recipe should have morning in its name. I searched for a while before stumbling into Morning Glory. There are so many morning glory recipes which include cakes, cookies, muffins and breads. There are even smoothies. This was the first time I was reading about morning glory and I did some reading about it. Most of the blogs have only the recipes but I couldn’t find any explanation anywhere except at King Arthur Flour Blog. Looks like morning glory was famous during 60’s and 70’s in America. But I don’t have any other fact about them, but these muffins are loaded with fruits, veggies and nuts.
Most of the recipes use all purpose flour, but as I have decided to skip all purpose flour from my baking, I used a combination of wheat flour/atta and oats. These muffins are also egg free. But if you want to add eggs, then skip the mashed bananas and yogurt in the recipe and add two medium eggs instead. For dried fruits, you can use raisins, cranberries or blueberries. I didn’t have any, so used tutti frutti instead. The recipe is so forgiving, so use what you have. Keep the flour and liquid ratio intact. I tasted a small piece and found it extremely sweet, but my daughter found it perfect. As kids devour anything sweet, this would make an amazing treat for them. If you are making this for adults, I would suggest you reduce the sugar quantity a bit. This also has sunflower seeds, apple, coconut and walnuts making it a nutritious treat. If you like sweet breakfast, then you would love it. I know the ingredient list is a bit long, but it is totally worth the effort.

Makes 12
Ingredients:
Whole Wheat Flour – 3/4 cup
Rolled Oats – 1/4 cup
Baking Soda – 1 tsp
Cinnamon – 1/4 tsp
Ground Ginger – 1/4 tsp
Brown/Cane sugar – 1/2 cup
Salt – 1/4 tsp
Grated Carrot – 1 cup
Grated Apple – 1/4 cup
Grated Coconut – 1/4 cup
Chopped Walnuts – 1/4 cup
Sunflower Seeds – 2 tbs
Mashed Banana – 1/3 cup
Coconut Oil / Melted Butter – 1/3 cup
Coconut Water / Fresh Orange Juice – 1/3 cup
Yogurt / Curd – 1/2 cup
Vanilla – 1 tsp
Tutti Frutti / Dry Fruit – 1/4 cup
Procedure:
Preheat oven to 175C.
Mix together wheat flour, oats, baking soda, cinnamon, ginger, sugar and salt.
Add in carrots, apple, coconut, sunflower seeds and walnuts and mix well.
Add in mashed banana, juice/ coconut water, oil/melted butter and yogurt.
Gently fold the batter.
Add tutti frutti or any other dried fruit and gently mix.
Line a 12 cavity muffin tray with paper liners.
Divide it between 12 muffin liners.
Bake in preheated oven for 20 – 25 minutes.
Remove the muffins from oven when a toothpick inserted comes out clean.
Cool on wire rack and serve.
Eggless Whole Wheat Morning Glory Muffins Recipe

This is a wonderful muffin Gayathri and yes this was one of the items I had in mind when I thought about Morning theme dishes. I was amazed at the variety one can have with the dishes having morning in it. So looking forward to your other dishes and themes.

The orginal recipe says a cup of brown sugar but I see that you have not added sugar ..Just wondering do we need to add sugar or does the banana and dry fruit make it sweet enough

Healthy muffins with fruits and nuts. I am still using APF for all my bakes, need to use other healthy alternatives. Bookmarking this to try Gayathri. Great share as always.

Yes, you can do that. the result will be mildly sweet.
These muffins are definitely a complete breakfast in itself with everything we need to take in breakfast including juice, nuts, fruits, seeds etc. In addition they look appealing too. Great share as always.
