It is already February and 2019 doesn’t feel like New year any more. This month I have some interesting themes and the first one this week is Desserts. Valli gave us the Wiki dessert page and we need to select three desserts By Type starting with the same alphabet. For the first day I chose Ice cream and the alphabet is P. P For Parfait. There are two types of parfait, French version where yolks and sugar are cooked on a double boiler, added with yogurt and frozen and the American version where yogurt is layered with nuts, granola and fruits which is more like a breakfast than dessert. I chose to make the American version with granola and caramelized bananas. Mostly parfait has colourful fruits like raspberries, strawberries or blue berries. But I went with bananas as I had them readily available.
Last month I made a no bake granola bar which is also used here in the layers. Though it is not baked it is so crunchy and I decided to use the crumbs in parfait. I was so skeptical about how Sruti would react, but still I made a serving and gave it to her. From childhood, she never says that the dish is bad. She always says that it is amazing, but I know when she likes it or not. IF she really likes it, shes will go for a second and third helping, but if she doesn’t like, she will stop with one. So whenever she says the dish is good, I ask her back whether it is really nice or chumma nice. Even for this I asked her and she said, amma it is really nice and finished off the serving in minutes. Hahaha! I prepared the yogurt the day before and on the day of serving, it was quite easy to assemble.
Makes one Serving
Thick Yogurt / Hung Curd – 1 cup
Brown Sugar – 2 tbs
Granola Bar – 1 slice, crumbled
Banana – 1, medium
Ghee – 1 tsp
Almonds For Topping
Mix together sugar and yogurt until light and fluffy.
Crumble the granola bar into tiny crumbs.
Slice bananas and roast them with ghee until golden on both the sides.
In a serving glass, add 1/3 yogurt mixture.
Top with 1/3rd of granola and some banana.
Repeat this twice more.
Finally add some toasted almonds on top and serve immediately.
