What is Christmas without candies? That is why I chose the theme Christmas candies for this week of Blogging Marathon. For the first day, it is a really simple white chocolate fudge. I saw so many recipes for Christmas fudge, but the one that impressed me was the white chocolate fudge. As I have worked with a dark chocolate fudge previously, I basically know how to handle it. With just white chocolate and condensed milk, the fudge gets ready pretty quick. The only time consuming thing in this recipe is the waiting time for setting the fudge in the fridge.
As you can see, I added a whole block of chocolate in the bowl, because I was too lazy to chop it. If you chop the chocolate, it would melt easily. Melt it in double boiler or in a MW, whichever method suits you the best. We need to melt it. While melting in MW, be really careful about the temperature. I use medium setting and heat the chocolate for 10 seconds intervals. White chocolate is so sensitive and would become crumbly if over heated. For the Christmas look, I added cherries and green tutti frutti. Add nuts, cranberries or any other dry fruits in the fudge as per your liking. Make sure to line the tin with aluminium foil. That makes it easier to lift the fudge from the tin without spoiling its shape. And allow it to set until hard in fridge. That also jehlps you with neat looking slices.
In a single day, I made three candies which will be featured this week. This was the recipe I worked first as it was easy to make and was placed in fridge within 30 minutes of starting. Then I went ahead with the other two recipes which are pretty tough when compared with this fudge recipe. By the end of the day I was finished with all the three, but I didn’t have the energy for the photo shoot. So all the candies went inside their respective boxes and only the next day I took the photographs and Sruti had to wait for the next day to taste them. Nothing goes into the mouth unless it is photographed. Kids of food bloggers understand this rule completely!
White Chocolate – 200 gm
Sweetened Condensed Milk – 200 gm
Vanilla Essence – 1 tsp
Dried Cherries – 2 tbs
Green Cut Fruits – 2 tbs
In a MW safe bowl mix together white chocolate and condensed milk.
Heat it on medium for 20 seconds.
Give a nice stir and repeat the 20 second bursts until the chocolate is completely melted and forms a nice fudge.
Remove from oven and add the essence, cherries and cut fruits.
Give a nice stir.
Line a 5″ square tin with aluminium foil and grease it with oil.
Pour the fudge inside and allow it to cool completely.
Cover with cling film and refrigerate over night or until set.
Slice it into cubes and refrigerate in air tight jar.
