Another month starts and this month I have some interesting themes lined up for the Blogging Marathon. For the first week, I chose No Cook Desserts. So it may sound simple, but only after choosing the theme, I found that it is a difficult theme. I couldn’t decide on recipes and I have been procrastinating for a long time. I asked Valli and even got to know that the dessert can be assembled with ready ingredients. I even had one such recipe in drafts but then it was nothing special. So I was breaking my head about what to choose and suddenly this idea came up. Recently I have been taking chia seeds daily as part of my diet and it is delicious. I go for a simple sugar free recipe but thought I could do something for the blog with the theme. You will be seeing three recipes with chia as the star ingredient. And all the recipes are for puddings. These are wonderful to serve as chilled desserts and are so healthy and nutritious.
Chia is called super food as it is full of essential nutrients. I am not going into the macros of chia in this post, but just know that chia is good for health. Usually they are added on top of foods and also added in smoothies. But you can also make a dish with chia as the main ingredient and that is the pudding. Chia absorbs liquid a lot. And it expands too. Once you soak chia, you need to give it minimum 30 minutes for it to expand and become jelly like. You can use milk, or any vegan alternative, or just water to chia. The seeds take the taste of the soaking liquid. When I first tasted this pudding, it felt like eating javvarisi payasam. I usually add salt in my pudding and avoid sugar. But for making desserts, you need to add sugar or any alternative to sugar. I love almonds and so they are in the topping. You can add any dry fruit or nut you like. This one is such a simple recipe but turns out absolutely yum. Try it yourself to know.
Makes 2 Servings
Ingredients:
Milk – 1/2 cup
Chia Seeds – 2 tbs
Sugar As per taste
Almonds and Pistachios For Topping
Procedure:
In a bowl mix together milk, chia and sugar.
Cover and set aside for 30 minutes to two hours. You can even let it sit in fridge overnight.
Keep mixing it at regular intervals so that the chia absorbs milk uniformly.
During serving, transfer the pudding to serving glasses, top it with sliced nuts and serve immediately.
P.S: You can add more milk to change the consistency of the pudding.
