Wishing You A Very Happy Mother’s Day
Ever since the talk of mother’s day started I have been dreading this day. As you might know, I lost my mom five years back, and the void she left has never been filled. So looking at all those pictures taken with mom, wishing for mother’s day has just increased the pain and has nothing to make me happy. But I was wrong about the making me happy part. My daughter has been working really hard to please me this past week. From helping me with household chores to making me my meals, she has been wonderful. She has also been so much secretive for the last week and whenever I enter her room, she asks me to clear the room immediately or she never lets me go inside the room. And when I asked her about that, she asked me to be patient. And I have been waiting ever since to know what secrets she has been holding.
Today when I opened the wardrobe, the first thing I saw was the beautiful hand made greeting card, wishing me a wonderful mother’s day. And after she woke up, she has been showering me with kisses and hugs, and for once I totally got over the pain of mom’s loss. She was there to fill the void, which I have been so blind to see. Then came a small basket of handmande flowers, which she made for my food photography prop. How sweet of her. Then she gave me an adorable card full of heart butterflies, and inside when pulled, the hearts rolled one by one wishing me. You can check my insta for the video.
And then came the final surprise. She had written down my low carb cake recipe so that she could make it herself. And with the help of that recipe she made a cake for my lunch, inserted a candle and asked me to blow it, when she sung a Happy Mother’s Day song. I didn’t imagine that today was going to be this beautiful and I am full of happiness. Coming to the recipe, she baked the cake in OTG. The recipe is usually used for MW cake, but for a change, I asked her to bake it and it turned out amazing. This is the first cake she has baked without my help and I should say, she has done an amazing job. The texture was fantastic and I was too happy! Touchwood!
Ingredients:
Coconut Flour – 2 tbs
Baking Powder – 1/2 tsp
Erythritol – 1 tbs
Stevia – 1/4 tsp
Egg – 4
Water – 1/2 tbs
Butterscotch Essence – 4 drops
Coconut Oil – 1 tbs
Procedure:
Preheat Oven to 160°C.
In a bowl mix together egg, water, coconut oil and essence.
In the baking bowl add the coconut flour, baking powder, stevia and erythritol.
Now add a little of the wet mix to the dry mix and whisk until incorporated.
Add the wet ingredients in batches and mix a smooth batter.
Bake it in oven for 30 minutes or until a tooth pick inserted comes out clean.
Serve it hot out of oven or cool and serve with whipped cream.
