Being on a diet is not easy if you don’t enjoy it. If you starve yourself, you will never love your diet because you will feel miserable the whole day. That is why you need to add proteins to the diet which helps you feel full and helps you in sustaining in the diet. For vegetarians protein source in paleo diet are so less. And one best source of protein is paneer or cheese. to make eating paneer interesting, you really need to come up with different recipes else again you get bored. That is what I am doing this month, helping you with paneer recipes which are so different from one another so that you get the satisfaction of variety.
During my non diet days, I used to make roti for a quick dinner with wheat flour / ragi flour. But after paleo happened, I couldn’t do it. But I was really craving for rotis one day and I made this roti with paneer. It feels like eating akki roti and I was literally jumping with joy. It was so yum with the coconut chutney on the side. I have used psyllium husk for binding. The type of paneer we use decided the texture of the rotis. Use homemade soft paneer. It is the best. To make soft paneer, add 100 ml of cream to 1 lt of milk and then make paneer. This makes the best soft high fat paneer best for your diet. This recipe is so easy to make just like all the recipes I am posting this month, so it is so good for a quick fix. I have added red chilly sauce. But you can add red chilly powder too. The flavour will be a little different.
Paneer – 200 gm
Psyllium Husk / Isabgol – 2 tbs
Salt – To taste
Onion – 1 small
Red Chilly Sauce – 2 tbs
In a bowl mix together all the ingredients and knead to form a soft dough.
Divide it into three equal portions.
Heat a tawa, keep on low flame. Pat a portion into a thin roti directly on tawa.
Cook until the bottom is crisp and it is easy to flip.
Flip the roti, cook the other side and serve it hot with a chutney of your choice.
