I love lemon rice so much and have been missing it so much. The best part is the crunchy channa dhal which adds so much to the texture and taste. As I can’t use channa dhal, I used some pistachios for the crunch. The tangy lemon flavoured the paneer so nicely. And the curry leaves and mustard seeds made it taste authentic. Again this is one of the simplest of all recipes and I love it so much. Whenever I crave for some lemon rice, I make this with paneer and have a hearty meal.
Lemon – 1
Paneer – 200 gm
Ghee – 1 tsp
Mustard Seeds – 1/2 tsp
Turmeric Powder – 1/4 tsp
Curry leaves – a few
Red Chilly – 2
Salt – to taste
In a pan heat ghee and add mustard seeds.
When they crackle add in the curry leaves and red chilly.
Add turmeric powder and mix well.
Extract the juice of a lemon and mix with salt.
Add this to the pan and mix it fast.
Immediately add the paneer and mix and allow it to cook on low flame for a minute.
Serve it immediately.
