Coming to the second day of vegetarian grilling, I am here with a delicious yet easy breezy recipe. The one thing I love being in paleo is paneer. It is one of the ingredient I have to eat daily and it is nearly five months since I started eating paneer for my dinner. And I still like it so much. It is one of the ingredients which takes care of my protein macros and so I can’t take it off my diet. But when there are so many recipes with paneer, why worry? I love baking paneer, but hubby is not such a huge fan. And he eats paneer only thrice a week, only on his vegetarian diet days. So the other four days, it is only me and I try to make different varieties in oven.
This recipe is one such dish which is so easy to put together. I always have Green Chutney in my fridge, which actually helps me to whip up chats in minutes. One day I tried using it with paneer and it was so good. I tried the stove top method too, but oven baking is the easiest. With grill setting in oven, the paneer gets ready in 20 – 30 minutes, but the time taken depends on how you want your paneer to be. If you like moist juicy paneer cubes, then cook it for lesser time. I like my paneer nice and crisp so I let it grill for longer time. Serve it along with lemon wedges and cucumber slices, I am sure you will love it.
Ingredients:
Paneer – 200 gm
Green Chutney (click for recipe)- 3-4 tbs
Salt – to taste
Ghee – 2 tbs
Onion – 1
Coriander Leaves, Lemon Wedges For Garnish
Procedure:
In a bowl mix together paneer, salt, green chutney and set aside for 30 minutes.
Preheat an oven in grill setting.
On a baking tray, add ghee and add the marinated paneer cubes along with sliced onions.
Place the tray on top rack and bake for 15 – 30 minutes according to the desired consistency of paneer.
Garnish with coriander leaves, and serve with a lemon wedge and cucumber slices.
