Do you remember my paleo ven pongal post? If you have not read it yet, do take a look by clicking on it. It was a weekend meal I prepared for hubby. Along with the ven pongal, I also made some paleo curd rice which was also with cauliflower. Before you ask me whether rice is allowed in paleo, no it is not and this is not the normal carb loaded rice. This is actually made with cauliflower minced to look like rice and it tastes so much like rice too. I have experimented a lot of recipes with cauliflower rice and I should say everything turned out great. And I felt so bad when the cauliflower season ended. But one day I was fortunate enough to see cauliflower in the farmer’s market and I bought two immediately. With those cauliflowers, I made this delicious spread.

You can either grate the cauliflower in a carrot grater or you can process the florets in a food processor until it resembles rice grains. Then transfer it to a MW safe bowl and mix required salt. MW it on high for 6-7 minutes and your cauliflower rice base is ready. You can use it in any recipe you need. If you don’t have a MW, no worries. You can steam cook it in an idli cooker. It turns out the same. As curd is added directly to the rice, it is better to add curd at the time of serving. Otherwise it will go sour.
Ingredients:
Cauliflower – 1 medium sized
Gingelly oil – 1 tsp
Mustard Seeds – 1 tsp
Asafoetida – a pinch
Curry Leaves – 1-2 sprigs
Green Chilly – 2
Curd as required
Procedure:
Grate and cook the cauliflower rice either in MW or n a idli cooker for 6-7 minutes. Do not forget to add salt before cooking.
In a small tempering pan heat oil and add mustard and hing.
When they crackle, add chopped green chillies.
After a minute ad in the curry leaves and add it immediately to the prepared rice.
Add curd and mix to get to the curd rice consistency.
Serve immediately.
How to pack this for lunch? i ll be cooking @6.00am & my husband lunch time is 1.30pm. will it last that longer or get spoiled?
If making this for lunch box, make it like we make usual curd rice. Mix milk with the rice and add two drops of curd. By lunch time the milk will set into curd.
This looks lovely. I have really been enjoying cauliflower rice in chinese type dishes (and even as dessert with cocoa powder) but I have not tried it yet with curd. Thank you so much for the inspiration!
