So many of you were asking me about the meal plan I follow for my paleo diet. So I tried putting together some dishes so that it would be helpful for those who are new to paleo. These dishes are totally vegetable based and doesn’t even include eggs.
For the past two weeks, I have started taking eggs in my diet and for those who also consumes eggs, I will add some recipes later. For now it is just veggies. Eating cauliflower rice daily may be so boring, so you need some variety in your lunch.
I make oven roasted vegetables once in a while when we get bored of cauliflower rice. You can add any paleo veggie in this dish. I try to add mushrooms, carrots, beets, cauliflower, broccoli, eggplant, white pumpkin, bottle gourd and any seasonal vegetable available. Do not use beans of any variety as they are not paleo. This one is quite easy to make and can be put together in 10 minutes. It just needs 45 minutes in oven. You can vary the spice powders you use to vary the flavour of the final dish. I always serve a raitha with the lunch. Mostly it is onion raitha or cucumber raitha. But this platter is so similar to the raitha but a little bit deconstructed. I had a batch of cream cheese at that time and so I put together this platter. The cream cheese adds to the richness of the dish. For recipe click Cream Cheese Platter or the image.
And finally a soup to bring everything together. At the earlier days of paleo, I used to be so hungry that I could gulp all these things in a go. But nowadays the quantity I take is reduced and I skip the soup in my lunch. But feel free to add it if you are very hungry. Roasting the pumpkin in oven before adding to the soup makes it so flavourful. And have this soup once in a while as this pumpkin should not be consumed regularly. Your recipes are awesome..I started paleo diet recently and on the first day itself got bored of eating only plain paneer or egg..ur cauliflower rice recipe is super. Made jeera cauliflower rice with palak paneer. And my tummy and taste buds r very happy. Going to try all ur paleo recipes. I have 2 doubts..1) plz suggest any vegetable alternate to cauliflower in making rice 2) how many cups of milk can I take per day ( I eat egg and fish , no meats)

Hi Susee, I am really glad that my recipes are being helpful. You can use cabbage instead of cauliflower in rice recipes, but my fav is cauliflower. I usually have one cup of milk in a non veg diet. Usually they ask you to avoid milk, but I am addicted to my coffee, so my butter coffee has a cup of milk in it.
I thought carrots beets are not paleo veggies?
You need to avoid them at the weight loss stage, but if this is a life style change, you can definitely use them.
