I am sure many of you are getting inspired with my paleo recipes. Here is one more which makes a great ingredient in your dishes. I was so used to rice in dishes and when I changed to paleo, I found it tough to eat the veggies roasted. That is when I came across this cauliflower rice. This looks like rice and you can adapt it to any rice recipe like pulao, fried rice and biryani.
From the day I found this rice, I have been making it daily for our lunch. You get some satisfaction to see a rice like dish when you are dieting. Prepping cauliflower is very important while making the rice. Usually cauliflower is loaded with chemicals and there are so many impurities in it. It is really tough to clean it. But there is a short cut. Either cut the cauliflower into florets or take the whole cauliflower in a large vessel, add enough water, crystal salt and vinegar. Heat until the water is very hot. Switch off flame and let it stand for 20 – 30 minutes. Remove the florets and discard water.
Your cauliflower will be so fresh and you can use it in recipes. This treatment also gets rid of the tiny worms in the florets which you could miss picking. You can use a food processor or a mixer to make the rice. If using mixer grinder, make sure to pulse it. If you run it too fast, you may end up with cauliflower paste. I love to add one or two broccoli florets or carrot along with the cauliflower. You can even make the rice entirely of broccoli, but being too expensive, I limit my broccoli intake.
Once the cauliflower resembles tiny rice, stop the mixer or Food processor. You can use it immediately in recipes or you can refrigerate it up to two days and use. I usually use this rice in making veg pulao, veg fried rice and soups. I will post the recipes when ever I prepare them. This rice can also be steamed and had with gravies. I haven’t done that but it is possible. Just like your usual rice. Prepare an elaborate meal with gravy side dish and cauliflower rice. I am sure you would love it.
