When I first selected this theme, all I had in my mind were mug cakes and everything related to baking. But I wanted to break that and make some easy to do meals for those who really want to make a single serve meal. And I also had to cook just for myself last week as hubby was not at all home for lunch and Sruti too the morning breakfast for her lunch also. And because of this theme, I really enjoyed my lunch with variety dishes. When I started blogging, I bought a pack of spaghetti, but no one liked it and I didn’t feel like cooking just for me. So that pack stayed with me for nearly two years and finally went to garbage. And then I stopped buying it. When Sruti watched MasterChef Australia, she saw all those spaghetti dishes and wanted to try them. Guess she is more adventurous now than she was five years back. So I bought another pack of spaghetti. This time, the whole pack was gone in just two months.
She started loving spaghetti and whenever the pack is finished, we go and buy a new pack. I usually make fusion dishes with spaghetti. I use Indian spices and chole and vegetables and some sauces to make a delicious dinner. Hubby is not so keen but he also doesn’t complain. I think because it has become his daughter’s favourite food. When I made this for myself, she was so disappointed that I didn’t keep her a portion. So I had to redo it the next day to satisfy her. While cooking spaghetti, retain some of the drained water and add it back to the dish to make a nice thick sauce. Serve it piping hot and you will see smiles. It is so easy to make and so tasty.
Ingredients:
Spaghetti – 50 – 75 sticks
Oil – 1 tsp
Button Mushroom – 2-3
Onion – 1 small
Tomato – 1 small
Dried Basil – 1 tsp
Hot and Sweet Tomato Sauce – 2-3 tbs
Salt and Pepper To Taste
Coriander leaves – 2-3 tbs
Procedure:
In a large pot, bring enough water to boil.
Add a little salt and a tsp of oil and add the spaghetti.
Boil for 10 – 15 minutes until well cooked and tender.
Drain on a sieve and retain the water.
Heat a pan and add oil.
Add onions and dried basil and saute until the onions are golden.
Add in tomatoes and mushrooms and cook until they are tender.
Add the sauce and salt and pepper.
Add the cooked spaghetti and 1/4 cup of the drained water.
Cook everything for a minute or two.
Add coriander leaves, give a stir and remove from flame.
Serve it piping hot.
