Today is the second day of week two in which I am posting chat recipes. Yesterday, it was a very simple aloo chat, but today, it is a little bit elaborate. Usually chat recipes have so many individual recipes and when they are put together in a particular manner, you get a delicious chat with so many flavours merged. Dabeli Pav also known as Kutchi Dabeli / Kutchi Double roti originated in Mandvi, Kutch during 1960. Dabeli means to press and the potato masala is pressed between a toasted pav bun with other fillings. This is a filling snack and when I made this I had it for my lunch too.
The dabeli masala is easily available in Northern and Western India, but here in Madurai, we don’t get it. So I had to make it at home. I followed the recipe from Tarla Dalal website. You can take a look at my post for the masala powder. If you can get it in stores, don’t hesitate to buy. I also made whole wheat pav buns especially for this chat series. But before I made the chats, my daughter devoured some of them by slathering butter and sugar on toasted pav buns. I haven’t yet posted the recipe for the buns. Will post it once this BM is over.
Whenever I make this type of chat, I love to place all the components of the dish in one place. Else I will surely forget some while assembling. If you see my chat recipes, you will find this type of snap in every detailed chat. I just love this part of the chat making. This is called as mise en place, which is a French term which means putting in place. I learnt it by watching Master Chef. My daughter has taken a liking to the flavour of chat masala. If I sprinkle chat masala on any food, she would eat it immediately. So nowadays, I even sprinkle chat masala over bajjis and roasts. This weeks’ dishes were all loved by her which made me so happy that my daughter is growing and she has started accepting so many different flavours. I hope you love this chat too.
Ingredients:
For The Potato Filling:
Potato – 3
Oil – 1 tbs
Cumin Seeds – 1 tsp
Asafoetida / Hing – a pinch
Dabeli Masala Powder (click for recipe) – 2 tsp
Salt – to taste
Sweet Chutney (click for recipe) – 2 tbs
Other Ingredients:
Pav Buns
Chopped Onion
Pomegranate Seeds
Sev
Coriander Leaves
Roasted Peanuts
Chat Masala
Procedure:
In a pan heat oil and add cumin seeds.
When they crackle, add asafoetida.
Boil, peel and mash potatoes.
Add the mased potatoes to the pan.
Add dabeli masala powder, salt ans sweet chutney.
Mix well.
Add coriander leaves and remove from stove.
Set aside to cool.
Arranging The Dabeli Pav:
Slice the pav buns horizontally into two.
Add butter to tawa and roast the buns until golden.
Apply sweet chutney on the buns, place a portion of the potato masala on the lower half of the bun.
Top it with onions, sev, peanuts, pomegranate, coriander leaves and sprinkle some chat masala on top.
Place the top half of the bun on the arranged bun and serve immediately.

Ingredients
For The Potato Filling

Mouthwatering dabeli, Gayathri. My husband goes to our local Indian grocer on weekends especially to get the super spicy dabeli sold there. I think it’s time to try it out at home.
