This weeks’ blogging marathon is the final week of February and the theme I have selected is Bookmarked. I have to cook three dishes from fellow marathoner’s blog who are doing the same theme. So for the first day, I thought of blogging about a dish from Sapana of Cooking with Sapana. She is a wonderful blogger who cooks or bakes anything perfectly and her snaps are awesome. As I wanted to keep it simple, I selected this microwave mug cake recipe from her blog as my chocoholic daughter would be very pleased with anything chocolate.
I wanted to prepare it fresh for Sruti and so I waited for her to return home from school. But lately she has been into doing everything herself. She makes her own dosas and makes it for us also. And she wanted make this cake herself. I couldn’t refuse. So I just stood nearby and instructed her about the ingredients and she was happy to do it. I did some changes to the recipe according to the ingredients available in my pantry. As I didn’t have milk, I substituted with milk powder and water. I felt that the amount of baking soda was too much and so decreased it. And I added some instant coffee powder to enhance the chocolate flavour. Once the batter was mixed, I gave the finishing touch and placed it in oven. She couldn’t wait until I took the snaps. I served the cake along with a scoop of my home made easy breezy mango ice cream (recipe later) and she enjoyed it thoroughly.
Recipe Adapted From Sapana
Ingredients:
Flour/ Maida-3 tbs
Granulated Sugar-2 tbs
Milk Powder-1 tbs
Cocoa Powder-2 tbs
Salt-a pinch
Baking Soda-1/4 tsp
Instant Coffee Powder-1/4 tsp
Water-3 tbs
Oil-3 tbs
Vanilla Essence-1/2 tsp
Chocolate Chips For Topping
Procedure:
In a mug take all the dry ingredients.
Give a nice stir so that they are evenly mixed.
Add the liquid ingredients.
Mix well so that it becomes a nice thick batter.
The batter should only fill half the cup. Else the cake might overflow.
In your microwave set at high and place the mug inside.
Microwave for two minutes. This time varies depending on your oven power. Mice cooked the cake in 1 1/2 minutes.
Insert a tooth pick and check for doneness.
Serve hot along with a scoop of ice cream.

I am doing this!! How much milk should I add if I prefer to use it instead of milk powder! And where do you get mango in this season to make icecream
Three tablespoons of milk. Omit the milk powder and water.
