I am taking part in a month long blogging marathon Buffet on Table for this month. For the first week it was international combo dishes and for second week, it was recipes from Indian states. For the third week, the theme is condiments. So, what are condiments. According to wiki, a condiment is a spice, sauce or other food preparation that is added to food to impart or enhance particular flavour or to compliment a dish. Any spread, sauce, spice mix comes under this category. In Indian cuisine chutneys and spice powders can be labelled as condiments. For the first day, I will be writing about the spice powder popular in Eritrea, a country in Africa. When I made the Ethiopian meal, this berber spice also featured in the dishes. Eritrea and Ethiopia are neighbour countries and there are so many similar dishes in both cuisine. This spice powder is one among them. This is a mix of various powders and was so easy to prepare. And it had an unique flavour and the dish I used this spice powder also had nice flavour due to this spice powder. I usually have ground spices in my fridge and so it was so easy for me to put together this spice powder.

Ingredients:
Red Chilly Powder-1/3 cup
Garlic Powder-2 1/2 tsp
Onion Flakes-1 tsp
Ground Ginger-1 tsp
Ground Clove-1 tsp
Salt-1 tsp
Ground Cumin-1/2 tsp
Ground Fennel-1/2 tsp
Ground Cinnamon-1/2 tsp
Ground Cardamom-1/2 tsp
Ground Black Pepper-1/2 tsp
Procedure:
In a bowl take all the ingredients.
Mix them well.
Store in an airtight jar.
Use in recipes as suggested.
