I bought a Popsicle mould long back, I think nearly 3 years back and haven’t used it even once. It is sitting with all the other tins and moulds in a cupboard ever since. Whenever I go to that room to fetch a tin, my daughter would ask me to prepare a popsicle. I will promise her that she will have that popsicle soon but afterwards I used to forget about it and even she forgets about it. Madurai is so hot nowadays and I feel that summer has started pretty soon. And Sruti’s annual exams are over and she is on a brief holiday. I have to search for her favourite recipes to feed her as she is constantly in need of some snack or the other. So one fine day, I brought the mould to the kitchen and was thinking of making popsicle. At the same time she was pestering me for some rose milk. So an idea flashed. Why not make her favourite rose milk in the popsicle form? I just went through the net to get a general idea of popsicles. The ones using milk and cream are known as creamsicles where as any juice frozen is called as popsicle. So I decided to make rose milk creamsicle. It is quite easy to make and I felt very bad for postponing such a simple delicious recipe. I have used rose milk essence to make this. But if you have a clear rose essence in your pantry, then add a few drops to the milk along with a few drops of pink colour to obtain the effect. I added a cup of whipping cream to the rose milk mixture to make it little creamy. The amount I mixed made 8 creamsicles. As my set has only 6 moulds, the remaining two portions were served as chilled rose milk and my daughter enjoyed it so much. So in a day all the 6 creamsicles were gone and now I have made some water melon popsicle for her to relish tomorrow. After mixing the rose milk, pour it into moulds, place the sticks and freeze them over night. Removing the creamsicles is very easy. You don’t have to struggle. Just place the moulds under running water until they melt slightly and when pulled will come out like a breeze.
Makes 8 Creamsicles
Ingredients:
Milk-2 cups
Fresh Cream / Whipping Cream-1 cup
Sugar-1/2 cup
Rose Milk Essence-20-25 drops
Procedure:
Heat and allow the milk to cool.
Add cream, sugar and rose milk essence and mix well.
Pour the liquid in the mould.
Place the stick on top.
Freeze the mould overnight.
To unmould, place the mould below running water for 20-30 seconds.
Pull the stick and the creamsicle will come out.
