Scones are a type of quick breads which originated in Scotland. Baking soda is the leavening agent used. It can also be called as a pastry as it is somewhat similar to pastry in preparation. Cold butter is rubbed into the flour and buttermilk is used to bring together the dough. Scones are served as breakfast, brunch or with afternoon tea. English scones are round in shape and are similar to the American biscuits. There are so many variation you can make to a scone. Usually they are lightly sweetened and served along with clotted cream, jam or butter. Scones taste best when served warm.
For Baking Partners’Â Challenges this month, host Archana gave us two recipes to choose from. One was this savoury scone and the other was a savoury tart. As there were so many hard to find ingredients in the tart recipe, I opted for scones. I have made two types of scones before and this one with cheese and sage interested me. Today I made it for breakfast. Only I would eat it for breakfast as hubby is interested only in traditional Tamil breakfast. I Â tasted it with butter and I liked it very much. I am not sure of hubby or Sruti. I need to test it during evening coffee. The melted cheese with sage on top was quite flavourful. With butter it tasted great.
Ingredients:
Flour-225 gm
Baking Soda-1 tsp
Salt-1/2 tsp
Pepper Powder-1/2 tsp
Cold Butter-50 gm
Cheddar Cheese-100 gm
Butter milk-150 m
Dried Sage-1 1/2 tbs
Procedure:
1. Preheat oven to 220C.
2. In a bowl add flour, baking soda, salt and pepper powder.
3. Mix well. Add cubed butter into the flour.
4. Rub the flour and butter until the flour is crumbly.
5. Add in half the grated cheese and 1 tbs of sage and mix.
6. Add buttermilk in the centre and mix until you get a soft dough. Do not knead. Just mix lightly.
7. Pat it into a round thick disc and place it on a greased and dusted tray.
8. Cut it into 8 triangles.
9. Sprinkle the remaining cheese and sage evenly on all the triangles.
10. Bake for 15 minutes.
11. Serve warm with butter.
Add salt, baking soda and pepper to flour.
Add cubed chilled butter.
Rub to incorporate
Add in the cheese and sage.
Add buttermilk.
Mix to make a sodt dough.
Pat the dough into a thick disc on a greased and dusted baking tray.
Cut into 8 triangles.
Sprinkle the remaining cheese and sage.
Bake until golden.
