Amond paste is an important ingredient in many pastries. This can be used to make cakes, cookies, and used as fillings in tarts, pies and many pastries. It can be readily available in markets but in Madurai, we don’t get it. I needed almond paste to make the German Tree Cake. When I serached the web for recipes, I found egg based recipes a lot. After so much of searching I found a recipe at yummly. It was a great recipe and the almond paste tasted absolutely delicious. With 1 1/2 cups of blanched almonds, I made 500 gm of almond paste.
First soak the almonds in water, bring it to boil and remove from flame. After 30 minutes, remove the skin from the almonds. It is quite easy after the soaking time.
Measure 1 1/2 cups of almonds into a food processor fitted with a steel blade.
Run the processor for 25 seconds and you will end up with finely chopped almonds.
Add 1 1/2 cups of icing sugar and 5 tbs of liquid glucose.
Run the processor for 60 seconds.
Transfer the paste to a box and refrigerate until use.
hi there, thank you so much for all your recipes. i followed your instructions to make whipped cream from garbonzo water and it worked fine. now i have a question about the almond paste. how do you work with it? it is so very, very sticky.
You can refrigerate it until firm and then roll it between parchment papers.
