Pathir Peni also known as Chirotti or Peni is a crispy sweet made of rava or maida. I have posted a recipe- Chirotti using maida and sugar syrup. When Srivalli announced the ICC for this month, I wanted to try out the rava version. Harini shared the recipe with Srivalli and in turn Srivalli shared it with us. The peni/ chirotti turned out very flaky. I sprinkled powdered sugar on top and it was so nice. This can be stored in air tight jar to retain the crispness. The recipe uses chirotti rava which is a fine rava. But those who don’t get chirotti rava ( just like me) grind the ordinary rava in mixer grinder to make it finer. In Karnataka, chirotti is served along with badam milk in functions.
Recipe Yields 12 Pathir Peni
Ingredients:
Rava/ Sooji-1cup
Ghee-4tsp
Rice Flour-2tsp
Salt-a pinch
Oil For Frying
Powdered Sugar for sprinkling
Procedure:
1. Grind rava to make it finer. Add salt and 2tsp ghee and rub it well to make it crumbly.
2. Add enough water to prepare a loose dough.
3. Cover with a damp cloth and keep it aside for 1 hour.
4. Mix 2tsp ghee and rice flour to a frothy paste.
5. Divide the dough into 15 equal sized balls.
6. Roll each ball into a thin disc and keep it covered.
7. Apply the rice flour paste on a disc and place another disc on top as shown.
8. Repeat with three more discs.
9. A stack should have 5 discs.
10. Roll it into a tight log.
11. Cut the log into 4 equal pieces.
12. Roll out each piece into a thin disc.
13. Heat oil in a kadai.
14. Keep flame medium and deep fry the discs until crisp.
15. Sprinkle powdered sugar when still hot and allow it to cool.
16. Serve along with badam milk.
Mix salt and ghee to rava and rub until it crumbles
Add enough water to make a soft dough and keep it covered for 1 hour.
Divide the dough into 15 equal portions.
Mix rice flour and 2tsp ghee till frothy.
Roll out the ball into a thin disc
Apply ghee paste on the disc and keep another disc slightly offset on the first disc. Stack 5 discs.
Roll out the stack tightly.
Make a log.
Cut each log into 4 equal pieces.
See the layers in the cut out portion.
Roll it out into a thin disc.
Deep fry the discs on medium flame.
Sprinkle powdered sugar on top of hot peni.
Serve and Enjoy.

One of my favourite,peni is different from chiroti,peni is like thin white like deep fried semiya,which is eaten with hot milk and ghee,which melts in ur mouth.good try.i liked the visual treat which U represent.
