Ellu podi is my favourite spice powder and I love it with rice and a dollop of ghee. The aroma which arises while grinding the powder fills the house and invites others to the kitchen. While I was preparing the powder, my daughter became curious because of the beautiful smell. She came running into the kitchen and asked me about what I was grinding. The recipe is very easy and I always keep a stock of this powder. This helps when you feel lazy to prepare a whole meal. Just fry some papad, prepare hot rice and enjoy it with this podi.
Ingredients:
White Sesame Seeds-2cups
Urad Dhal-1/2cup
Red Chilly-50-75gm(If you want it hot, then use 100gm)
Hing/ Asaefotida-1/2tsp
Salt-to taste
Dry roast the sesame seeds until they start popping. Transfer to a plate and allow it to cool.
Dry roast urad dhal until brown. Transfer to another plate. Then dry roast the red chillies with stalk on low flame until crisp. Transfer to the plate with urad dhal. Dry roast hing and salt and transfer it along with red chillies. Once cool, remove the stalks of red chillies and grind it along with the other ingredients in the plate to a fine powder. Grind the sesame seeds to a coarse powder. Add 2 tbs of the urad dhal powder to the sesame seeds to make grinding easy.
Mix every thing evenly and allow it to cool. Transfer to a jar and relish.
