Since I started with my paleo diet, I have been looking for some easy snack recipes so that I could enjoy some crunchy snacks without feeling very guilty. So nowadays my pass time is to enjoy YouTube videos on healthy baking and cooking. I skip all those recipes like cake and bread. Even though made with the healthy ingredients, a cake is still a cake, and I don’t want to indulge myself in it until I achieve my goal weight. But when I came across seed crackers, I was so delighted. They are so easy to make and there are no rules and regulations. You can add any seed you want. You can opt only flax seeds for these crackers and still they would be great.

Today is the second day of the Final week of Blogging Marathon#20. I am posting under Kid’s Delight Party Specials. Sunflower seeds are very good for health and I had a jar of roasted seeds. When I saw this recipe in my recently bought recipe book, I made it at once. It is very easy to prepare. And if your kid is not a fan of sunflower seeds, then you can substitute it with walnuts or almonds. These rolls have a nice crispy crust and soft and fluffy interiors. Serve it along with butter or jam and kids would love it.
Today the next week of Blogging Marathon is commencing. I am posting under the theme Summer Salads. When you think of summer you can always think about mangoes. So when I thought about salad, I wanted to use mangoes in it. I combined raw mango with chickpeas and cucumber to prepare this nutritious and filling salad. I bought a jar of roasted sunflower seeds from Nilgiris recently. I used it as a topping for this salad and it gave a nice crunch to it. As the mango I used was not tangy, I used a whole lemon in the dressing. If the mango is tangy then reduce the juice accordingly.
