For all those who are wondering what happened to me, I am still not back to regular blogging but I am fine. I was supposed to do the month long BM this month, but even after preparing nearly 13 posts, I opted out. I think this is called as the blogger’s block. I just don’t want to bake for now. But as I had so many recipes ready, I thought why not do one post atleast for Bread Bakers. For this month, the host Anshie of Spice Roots selected Bread sfrom Italy as the theme. As I had already made a bread but had it in drafts, I felt that it would be good to post it for this occasion.

I am back with the next Blogging Marathon week. This week, I will post three recipes which can be made for Kid’s birthday parties. Last week, I bought a mozarella cheese pack, and I wanted to use it in the snacks for this week. The first recipe is for calzone. Calzone are yeast breads, usually filled with sweet or meat fillings and are shaped like half moon. There is also fried version of calzone, where the prepared dough is fried instead of baking. Pizza calzone is a variation of calzone usually filled with pizza toppings.
Since I completed last month’s Blogging Marathon, I couldn’t even open my blog as Sruti became sick. For two weeks, she was sick on and off and I became so tired due to waking up at night and tending to her. I couldn’t even think of checking my blog for the next week. So I skipped the first week of this month’s BM and am joining by the second week. For the second week, I chose a theme which is the favourite of most of the persons I know. In my house, we never ever visit Pizza Hut or Dominos as I always make it at home. Once we happened to taste a pizza at mall and the very night my hubby and myself had boils all over his tongue which took some time to cure. So we always try to avoid eating pizza outside home. After making mozarella cheese at home, pizza has become even more tastier.
When coming to quick meal, I wanted to look beyond rice varieties. And this spaghetti dish is so easy to make and is completed within 30 minutes. I always watch Italian cookery shows in Fox Life channel. Some recipes they make are so simple but they are full of flavours. I tried one such dish for a day as an experiment and should say that it was a success. Both hubby and daughter liked it very much, but they added some ketchup to the spaghetti.
And here comes my final dish of the theme. When I was searching for stuffed pasta recipes, there were so many ravioli and tortellini recipes with various sauces and soups and seeing any other variety was so hard. And then I came across Lasagna Roll Ups. They looked so lovely and a nice twist to the original Lasagna. I have done a Mushroom and Spinach Lasagna earlier, but I used ready made lasagna sheets. But now I had the pasta dough and searched for lasagna roll ups with home made dough. I came up with no results. All of them use ready made sheets and I was lost. What will happen if I use the home made pasta? There is only way to find and it was to make it. I didn’t prepare lunch for me today as these lasagna rolls were supposed to be my lunch. I was a bit worried about the whole dish going wrong. I will end up with no lunch.Still I was feeling adventurous today and so I tried.
Today is the second day of Blogging Marathon and I am posting under stuffed pastas. When I was searching for recipes, I was awed by the variety of stuffed pastas in Italian cuisine. Even the shape matters. Tortellini is smaller and can be either served with a sauce or broth where as tortelloni of the same shape is bigger and is not served with broth. And looking at all the shapes, I am tempted to try all of them. But for now I will stop with three as hubby is becoming restless with all my pasta experiments. For today’s recipe, I thought of making it for lunch and even prepared hubby for the same. If he wants pasta, he can come home for lunch but if he doesn’t want it, then he would have to have his lunch with friends in hotel. But all plans changed and I was forced to make rice. But still I served him the mushroom broth and he was all praises. Then I added a tortellini to the broth. Just like yesterday, he said that it was nice, but didn’t want another tortellini. HE ended up eating rice, gravy and curd.
When Valli announced the Blogging Marathon themes for this month, I chose stuffed pastas as a theme, as I haven’t tried many pasta dishes. My hubby and daughter are not great fans of pasta and so I usually try to avoid it. But after watching Master chef Australia, I was tempted to try my hands at pastas. And I also know well that I will be the only person tasting them. But still I wanted to try and so I selected this. Coming to the theme, pastas are Italian specialities made with unleavened dough. It is better to go for store bought pastas when the dish requires dry pastas and make them at home when you need fresh pasta.
Schiacciata pronounced as skietch-atta is a flat bread from Tuscany region of Italy. Schiacciata which means squashed, is usually 1″ thick. There are so many variation of this bread. Tuscans brush it with olive oil and sprinkle salt and herbs. For this month’s Bake Along Subhashini selected a stuffed version of this bread. And the choice of filling was left to us. This uses olive oil and no butter which was a good change from all the butter loaded bakes I have been doing for the past two months.
Add ingrdients for the third dough. And knead.Add in the ingredients for the final dough. I forgot to add the candied orange peel at this stage.
Use a dough hook to incorporate the ingredients.Once incorporated it looks very sticky. Knead it for 20 minutes. It is still missing the candied orange peel. Take the peel in a mixer. These are the home made peel I prepared two weeks back.
Let it become crumb like.
Lasagna is a Pasta dish made in layers with meat sauce and cheese. I made a vegetarian version using mushroom and spinach. One of my readers wanted me to post Lasagna recipe. I have seen so many recipes but never attempted it at home. SO when I saw the Lasagna sheets in the stores I grabbed it. Those sheets were oven ready sheets so you need not precook the sheets. Just layer it with sauce and cheese and bake for 30 minutes and Lasagna is ready. This recipe is adapted from Titli’s vegetarian lasagna. It turned out wonderful. The white cheese sauce was absolutely delicious and it just melted in the mouth. I am really happy that I tried this. Next time I am planning to do a spicy version as hubby likes only spicy food. I assembled the lasagna and refrigerated it. The next day I baked it. There is one more lasagna in the freezer. You can either freeze uncooked lasagna or cooked lasagna. Both works great. So have one in freezer and on a day when you are in no mood to work in kitchen, just remove it, thaw and bake. Your food is ready in 30 minutes without even doing any work…
