Before you start exploring the vast ocean of cake decorating, I would like to share with you some of the basic tips you need to know to make a perfect cake. I have gathered all those tips I learnt during these years of cake decorating. Some I read online, some I saw in videos and some came with experience. I hope this post will help you if you are beginning your cake decoration journey.

Rasmalai cake has been in my wish list for long. This is such a great fusion dessert, combining both the Indian flavours and the cake. For the cake I used my best oil based vanilla cake recipe. But to give a nice Indian twist, instead of adding the vanilla essence, I used badam milk essence, which gives the cake a nice flavour and colour. And it goes perfectly with the rasgollas and cream. As I have discussed many times, use oil based recipe if you are serving the cake chilled. If you use butter cakes, you will have a hard cake but if oil based cake is used, it will be super moist even after refrigeration.

I am sure you will also be interested to know how I used that cream to make this beautiful cake. It is quite easy to make and don’t be afraid looking at the photos. If you master the basic techniques, it is so easy to put a cake together.
After I started making cream cakes for my YouTube channel, I get so many queries regarding the cream I use and how I stabilise it so that the flowers stay put on the cake. So to clear all your doubts, I have made this video. Using a good cream is the major factor while decorating cream cakes. When I was a kid, all bakeries would have butter cream cakes, but nowadays, whichever bakery I visit, I see an array of eye catching colourful fresh cream cakes/ pastries as they call it.
I have been so busy with blogging that I completely forgot about my YouTube channel. But even I am not posting regularly, I do interact with my viewers. They keep asking me about recipes and give me some ideas for videos. One idea was the box cake. I made the cakes, ganache, but lost interest and kept in fridge for a week. When my fridge became overcrowded, I had to finish the cake and finally I completed it two days back.

Halloween is just a week far and I wanted to make a cake specially for that. Conceiving a cake idea is really hard. When I am not very sure what to make, I ask my daughter. She usually gives an answer which will form the foundation of my project. So when I asked her for Halloween ideas, she mentioned spooky witches’ fingers. I have it already on the blog so I said no. But after a while, I thought why not make a cake with the spooky fingers. I couldn’t find a single cake made with finger cookies, so decided to make it.
I have done some Barbie doll cakes, both for my daughter and for clients. At first, the gown of the doll would not be proportionate, but after some practice, I have come up with certain measurements of cakes, which gives a nice perfectly shaped skirt for the doll. The trick in getting it correct in using the cakes which gradually decreases in circumference as it goes up. You can even invest in a doll cake pan, which helps you to make a doll cake without any effort. Or you can choose to make same sized cakes and then carve them to the skirt shapes. But there would be a lot of wastage.
Do you remember the white chocolate ganache recipe I posted. That ganache was used to fill and frost my daughter’s birthday cake. When I was making the cake, I tried to make a video for that too. I have so many readers asking for videos on decorating cakes and here is my try at it. I thought shooting a video would be easy, but after starting the shoot, I felt that it is too hard. Kudos to all those youtubers who make amazing videos. I know that this is not very perfect, but this is my humble attempt to show you how I frost.
