Let me start this New Year with a delicious chocolate cake. I have been trying to make swiss roll for so many days now. Making a perfect roll without any cracks is a great challenge. And I have been failing badly in it. When I saw a recipe for chocolate swiss roll, I noted that recipe and tried it on one fine day. And like all the attempts, even this failed and I was left with a bowl full of cake crumbs. I didn’t want to make cake pops again. So I searched the net for recipes to use up the cake crumbs and chanced upon a video by Bhavana. That video gave me an idea for these rolls.

Cookies and cream is a combination which has been tried widely in cakes and desserts. So I decided to make my version of the cupcakes. For the cupcake recipe I used my eggless chocolate cupcakes I posted earlier with little change for a more fluffier texture. I also made a video for the same. The batter has an oreo cookie stuffed inside before baking. And the cream has the oreo crumbs in it. And finally, an oreo cookie tops the whole cupcake.
Do you remember my Best Home Made Cream Cheese I posted a while back. Apart from using it for cheese cake shots, I also used it to make frosting for my cakes. I have been getting so many requests for the cream cheese frosting recipes and it is time to give it. I have demonstrated three types of frosting with the cream cheese. If you are not interested in making it at home, use the store bought one. But nothing can beat the home made one.
This month has been very bad so far. I have been failing in many of my experiments and I am feeling so low nowadays. But still I couldn’t keep away from trying new things. Though I share my success stories here, my failures doesn’t make to the blog. But they are surely lessons learnt and I will never be repeating those mistakes again. I selected candies for this month and it is testing my patience too much. First I tried making honeycomb. The result was awesome, but I poured it into a smaller tin and it oozed out. Somehow I contained it inside the tin, but the paper I used for lining stuck to it. I had too waster all those paper stuck honey combs but still Sruti loves those bits and pieces which I recovered after breaking it. Next I tried making peanut brittle. This time I oiled the paper, the mixture came out perfect but again the brittle stuck to the paper. I tried a lot to remove the paper but couldn’t even remove a single bit of it. That is it, the whole batch got wasted.
Made with layers of cake, ganache and whipped cream, this shot glass dessert with leftover cake is so easy to assemble and tastes so yum. When ever I make a cake for video, I am always left with a few pieces of cake and some frosting which most of the time gets a make over as cake balls. When Valli announced the theme of shot glass desserts, I wanted to make this as one of the recipes. This will make a great party dessert and you can bake the cake especially for that. And it is so easy to assemble and I am sure your guests will praise you.
Read on to know The Best Homemade Cream Cheese Recipe. I have made cream cheese at home already which is my go to recipe till now. You can watch the video and read about it at Home made Cream Cheese. But after I started using the liquid rennet for my cheese making, I was searching for a recipe for cream cheese too. The recipe I have posted before is just a substitute for cream cheese and can be made with paneer and curd. It is effective but it is still not very smooth. There is a slight grittiness from the paneer, however you grind it. I even have got queries about making smooth cream cheese as we get in shops. But at that time, I didn’t know about it and so I couldn’t give them a better recipe. But don’t worry, it works great in all cream cheese related recipes. I have already made no bake cheese cake, baked cheese cake, cream cheese cookies and many more. But if I tell you that there is one more recipe which gives you the smoothest cream cheese, will you say no to it? Of course not.
After two simple recipes, here is one slightly tough to make dessert recipe which was loved by my daughter. Of all the three this was her most favourite as this was completely made with chocolate. With a dark chocolate eggless cake and a creamy dark chocolate mousse, this is also topped with a chocolate glaze and chocolate vermicelli. I am sure this would be an amazing dessert for all chocolate lovers over there. The mousse is so light and cuts the overload of chocolate and makes it a pleasant well balanced dessert.
Time flies so fast and we are in the third week of Blogging Marathon this month. For the third day, I have chosen the theme Holiday Dishes. My kiddo enjoyed nearly one and a half months of summer holidays and went to school only today. Keeping kids occupied during holidays is a difficult job and filling their tummies is too much hard work. Whenever my daughter gets bored, she asks for snacks. And I had to control the amount given as there were so many snack breaks during the day. As summer was at its peak during holidays, I made lots of cool drinks, ice creams and chilled dishes to beat the heat.
From the day I posted the Eggless Black Forest Cake Recipe, I have been getting numerous queries on White Forest Cake. So what is white forest cake? It is the opposite of Black Forest Cake. With white chocolate cake, the layers are filled and frosted with whipped cream and decorated with white chocolate. I decided to make a video for the recipe to make the demonstration easier. I have decided to make cake videos every week and so if you want me to do a cake with simple decorations, pour in your suggestions. I will be happy to do.
Last week, Madurai was so hot, I felt like running away to Munnar. Wherever I went, I took the pedestal fan along with me as ceiling fan was not doing its work properly. Working in the kitchen was the toughest job of all. But I had guests during that time, so couldn’t stay away from kitchen. My nephew is one of my fan when it comes to cooking. He loves most of the dishes I create and so if he visits, I make sure to prepare varieties of bakes and desserts. There were some mangoes and to beat the heat, I made these extremely delicious mango creamsicle for the kids.
