When I was looking for some brownie variations, I came across this cocoa brownies at Cafe Delights. Usually we melt butter and chocolate and use in brownies, but this recipe is different. It uses cocoa powder. It also has a little bit of oil in the recipe which gives the fudge texture to the brownies. I converted the recipe to eggless and halved the recipe and baked a small batch. And all the slices were shared with the guys in our office. I didn’t even show it to Sruti.

Though I was not satisfied with the yesterday’s photos, I am so happy with my today’s brownie recipe and the photos. When I made Eggless Brookies, it gave me an idea for brownies but I never tried it. When the theme brownies was announced, I thought of trying this recipe for a day. I know that the combinations work, but in the brownie pan baked in a tin, I was a little sceptical. But all my doubts cleared when I sliced it and I was so happy to see perfect squares. This went to my daughter’s friends today and she came back with so much of positive feedback from friends. Daughter happy, mom also happy.
For this week’s BM, I have selected a theme my daughter loves, Brownies. I have already posted some brownie recipes and still I am in search of a good recipe. Today I tried a recipe and I should say they came out super gooey. The taste was so good and my daughter gave me a thumbs up but I am not at all satisfied with the look of the brownies. I actually added more batter to the ramekins and they started oozing out of the rim. So the final result is not such a great beauty, but look at the portion in spoon, it is totally good.
For the second day of vegan sweets, I wanted to make a cake. How can I avoid a cake? Before five months, I was believing that wheat flour is so good for health. But after reading all those problems it creates, and advice from our group to stop feeding kids with wheat, I have stopped making anything with wheat or maida for Sruti. I am not a doctor or a nutritionist, so I couldn’t explain you in detail of what harms come by consuming wheat, but if you search the web, I am sure you will find many articles. I know so many of you will not agree, but it is a fact. I don’t mean to bore you with my diet details, but I feel that whatever I learn I need to pass it on to my readers. May be some of you can change your way of life.
My daughter is a chocoholic and she also loves her coffee. She loves every drink I make based on these two ingredients. So for this summer, I wanted to make her a drink which will awe her. I kept it as a secret from her. I made the mocha and refrigerated it two days back. And on the day of serving, she was so surprised that I took out the cream and was whipping it with some coffee. As she knows that I will never taste that cream, it can mean only one thing, it was for her and she started nagging me with questions. What are you doing? I said surprise!
A good news to share. Sruti has completed her junior school and she is going to high school. Nowadays it is so normal to conduct graduation day for students going from class fifth to high school and it was also conducted in Sruti’s school. They made their graduation day caps and it was a lovely sight watching all the kids walking the stage with their caps on. We had a wonderful time at her school and to celebrate it, I made a graduation day cake for Sruti.
Black forest cake is one of the hot selling cakes in any bakery. And even the recipe in my blog and YouTube have got a good number of views. Whenever I post cake recipes, I get so many requests for cooker cakes. In India, before OTGs came into normal day to day use, pressure cookers were the ovens for most of the housewives, including my mom. My mom used to add some fine sand in the bottom of a cooker or a cast iron pan and baked cakes in it. The sand used to maintain even heat throughout the pan and so the cake baked will turn out so good. I started pressure cooker baking only after some viewers asked me for the recipe.
This month’s Bread Bakers host Mayuri of Mayuri’s Jikoni wanted us to make pancakes. And it can be a regular one or from any part of the world. When I was browsing through the blogs, I found that there are so many types of pancakes around the world and even our dosas come under the same category. I was looking for easy recipes and as it involves maida, I wanted to make a small batch. I saw the Greek version of pancakes usually served with honey. When I read the recipes, I found there were two recipes for the tiganites. One is like the usual pancake made with flour, milk and eggs but the other one was made with yeast and had no eggs. So I chose to make the yeasted tiganites.
For the second day of Cakes and Cookies theme, I chose to make chocolate muffins. My daughter is a great chocoholic and she loves anything chocolate. Muffins are easy to bake and makes a lovely snack for kids. When I went through the list of muffins I have baked, I saw that I don’t have a chocolate muffin in my archive. So I decided upon these muffins and to make it more interesting, I added tutti frutti and choco chips to the batter.
