Here comes the next week of Blogging Marathon and I have chosen Easter treats as the theme. At first I was planning for some breads, but I couldn’t make them ahead and on the day of posting, I didn’t want to go for any complicated recipe. When I was browsing through recipes for easter desserts, they are mostly chocolates and I came up with one of my own. I put this together with all the ingredients from my pantry. You can go for any filling you like as this is so versatile.

Black forest cake is one of the hot selling cakes in any bakery. And even the recipe in my blog and YouTube have got a good number of views. Whenever I post cake recipes, I get so many requests for cooker cakes. In India, before OTGs came into normal day to day use, pressure cookers were the ovens for most of the housewives, including my mom. My mom used to add some fine sand in the bottom of a cooker or a cast iron pan and baked cakes in it. The sand used to maintain even heat throughout the pan and so the cake baked will turn out so good. I started pressure cooker baking only after some viewers asked me for the recipe.
For the second day of Cakes and Cookies theme, I chose to make chocolate muffins. My daughter is a great chocoholic and she loves anything chocolate. Muffins are easy to bake and makes a lovely snack for kids. When I went through the list of muffins I have baked, I saw that I don’t have a chocolate muffin in my archive. So I decided upon these muffins and to make it more interesting, I added tutti frutti and choco chips to the batter.
Let me start this New Year with a delicious chocolate cake. I have been trying to make swiss roll for so many days now. Making a perfect roll without any cracks is a great challenge. And I have been failing badly in it. When I saw a recipe for chocolate swiss roll, I noted that recipe and tried it on one fine day. And like all the attempts, even this failed and I was left with a bowl full of cake crumbs. I didn’t want to make cake pops again. So I searched the net for recipes to use up the cake crumbs and chanced upon a video by Bhavana. That video gave me an idea for these rolls.
Do you remember my Best Home Made Cream Cheese I posted a while back. Apart from using it for cheese cake shots, I also used it to make frosting for my cakes. I have been getting so many requests for the cream cheese frosting recipes and it is time to give it. I have demonstrated three types of frosting with the cream cheese. If you are not interested in making it at home, use the store bought one. But nothing can beat the home made one.
December is going to be a busy month. Apart from the usual BM I do every month, I have also signed up for another event Bake-a-thon, brain child of Srivalli. This is an event which happens ever December, but this is the first for me. On all Mondays, Wednesdays and Fridays we need to post a recipe which has been completely baked in oven. As I love baking, I didn’t even think twice.
Made with layers of cake, ganache and whipped cream, this shot glass dessert with leftover cake is so easy to assemble and tastes so yum. When ever I make a cake for video, I am always left with a few pieces of cake and some frosting which most of the time gets a make over as cake balls. When Valli announced the theme of shot glass desserts, I wanted to make this as one of the recipes. This will make a great party dessert and you can bake the cake especially for that. And it is so easy to assemble and I am sure your guests will praise you.
Battenberg cake also known as Domino cake, Neapolitan Roll or Church Window cake is made of two sponge cakes, one pink and one yellow, arranged so that it forms a 2*2 checker pattern. Usually apricot jam is used to stick the cakes and marzipan is used to cover the whole cake. The origin of this cake is England and it is said that it was named in honour of the marriage of Princess Victoria, grand daughter of Queen Victoria to Prince Louis of Battenberg.
