So many of you were asking me about the meal plan I follow for my paleo diet. So I tried putting together some dishes so that it would be helpful for those who are new to paleo. These dishes are totally vegetable based and doesn’t even include eggs.
This cream cheese platter along with onions and cucumber makes a great snack option for your diet or you can serve it as a side dish for your lunch or dinner. However you serve it, it is so delicious and I am sure you will go for a second helping. I could just live off with this plate for weeks. I served it along with oven roasted veggies and pumpkin soup for my lunch.
This soup is so flavourful as the pumpkin pieces are roasted in oven before making the soup. It will make a super filling appetizer to any meal. Or just have it for your evening 3 PM hunger pang, or serve it up for dinner. I make it once in a while when I feel very hungry. This is part of the paleo meal plan #1 I have posted. I also served Oven Roasted Veggies and Cream cheese platter along with this.
I make this for lunch every alternate day so that I don’t get bored of the cauliflower rice. I even add the roasted veggies to cauliflower rice to make it more interesting. Today I will share with you the easiest way of making this. You just need to slice up the veggies, add the spices and ghee, give a nice mix and bake in oven till done. Doesn’t it sound easy? It is also so delicious and can be put together easily enough.
I think you guys remember my post on Butter tea a while back. After starting with my diet, that was my breakfast most of the days. I actually omitted the tea and mixed only milk and butter. But when I left for Delhi, my hubby was left to make it for himself. And he tried to make it with tea leaves. When I returned back, he told me that adding tea leaves made the tea more delicious and he felt so full until mid afternoon. So I decide to make it again. But before attempting it again, I wanted to check out the perfect recipe for the tea.
I have stopped using store bough tomato ketchup as it is loaded with sugar. I have been off sugar for the past two months and so I had to look for a sauce recipe without the sugar which I could use as a dip. I used to make tomato ketchup at home before marriage, but I used to add a lots of sugar to it. So I had to change that recipe slightly to make it perfect for my current diet.
After the green chilly sauce I posted yesterday, I also made the red chilly sauce. This is almost like the green chilly sauce but with little variations. I made a paneer dish with both sauces and we just loved them. It is so much better than the pricey store bought sauces. You can store these in refrigerator for three months because of the vinegar in the sauce. The reason why I chose to make these sauces was because of my paleo diet.
For this month’s BM, I chose the theme sauces and preserves for week one. We use a lots of sauce in cooking and I always had stock of green chilly sauce and red chilly sauce and use them up whenever I make Indo Chinese dishes. But after I started paleo diet, I have started reading labels and when I went through the labels of sauces, there were so many ingredients which we don’t take in paleo such as sugar, potato and corn flour. But still I made chilly paneer often for our dinner and so decided to make a home made sauce with only paleo approved ingredients.
I am on paleo diet for almost two months now and I try to maintain it properly. Snacking can be a problem when it comes to paleo if you are unaware of the tricks to make delicious snacks. I am yet to learn those tricks. I think I will get there in a few months. I usually snack on almonds and curd. But recently, I am trying to incorporate more cheese into my diet. This grilled eggplant is one way of adding cheese without affecting the diet. When I announced that I am making an eggplant pizza, my daughter was curious. She wanted to remove the eggplant pieces from the pizza and eat the remaining. But she didn’t expect that the eggplant itself is the base for these mini pizzas. She was totally disappointed.
Last week I spent five days in Delhi with my food blogger friends and enjoyed it so much. I will be writing about my adventures in Delhi in a while. As I was away from home, I didn’t even check my blog for the last seven days. After coming back, I was so tired, I couldn’t again sit to write in the blog. Today I am back to my dieting and love to share with you a very important drink which we have been drinking for the past 45 days.
