Here is my final casserole for this week. This is again made with the cheese sauce I posted yesterday, but the paneer is quite spicy. Instead of seasoning it with salt and pepper, this one is made with typical Indian spices which makes it more of a fusion dish. The garlic flavour is prominent in the paneer and combined with cheese sauce it was absolutely yum.
When Cindy announced that this month’s Bread Bakers challenge is nut meal and nut flour inspired, I was so happy. As you know I have been on a low carb high fat diet and am keeping myself away from breads. But making a bread with nut flour/ meal is the best option I can have as I use nuts a lot. I bookmarked a sandwich bun recipe, which I tried in a loaf tin and got good results. But it never made it to the blog. It was time I posted that recipe. As the recipe uses only almond flour, this is a gluten free bread. So if you have gluten allergy, then go for it. It is amazing.
For the second day of vegan sweets, I wanted to make a cake. How can I avoid a cake? Before five months, I was believing that wheat flour is so good for health. But after reading all those problems it creates, and advice from our group to stop feeding kids with wheat, I have stopped making anything with wheat or maida for Sruti. I am not a doctor or a nutritionist, so I couldn’t explain you in detail of what harms come by consuming wheat, but if you search the web, I am sure you will find many articles. I know so many of you will not agree, but it is a fact. I don’t mean to bore you with my diet details, but I feel that whatever I learn I need to pass it on to my readers. May be some of you can change your way of life.
For the second day of toasts, I made one for us. As Sruti was sick after all the travelling, I couldn’t make her any bread recipes. So I made a paleo recipe so that myself and hubby could taste it. I had bookmarked an almond flour bread recipe from Headbanger’s Kitchen long back, but didn’t get an opportunity to try it. And this theme was the perfect occasion to try. To the batter I also added some Italian seasoning to make it more flavourful. This recipe has an egg in it so if you are following veg paleo diet, please excuse me. As I wanted to add more protein to my diet, I have started consuming eggs in different forms.
I am on paleo diet for almost two months now and I try to maintain it properly. Snacking can be a problem when it comes to paleo if you are unaware of the tricks to make delicious snacks. I am yet to learn those tricks. I think I will get there in a few months. I usually snack on almonds and curd. But recently, I am trying to incorporate more cheese into my diet. This grilled eggplant is one way of adding cheese without affecting the diet. When I announced that I am making an eggplant pizza, my daughter was curious. She wanted to remove the eggplant pieces from the pizza and eat the remaining. But she didn’t expect that the eggplant itself is the base for these mini pizzas. She was totally disappointed.
