For the second day of Cakes and Cookies theme, I chose to make chocolate muffins. My daughter is a great chocoholic and she loves anything chocolate. Muffins are easy to bake and makes a lovely snack for kids. When I went through the list of muffins I have baked, I saw that I don’t have a chocolate muffin in my archive. So I decided upon these muffins and to make it more interesting, I added tutti frutti and choco chips to the batter.
After the two chocolate cupcakes in a row, here is a different one which is a favourite for most of the people I know. Red velvet is is my favourite too. Even though some are not very keen on the food colour used, I don’t mind tasting this once in a while. But still I need to try a recipe using beetroot for those who wants the all natural cupcake. These red velvet cupcakes are made with oil and so these can be decorated with cream frosting and can be refrigerated without loosing the moistness. And like most of the eggless cakes, this is a one bowl recipe. Mix everything in a bowl and bake.
Cookies and cream is a combination which has been tried widely in cakes and desserts. So I decided to make my version of the cupcakes. For the cupcake recipe I used my eggless chocolate cupcakes I posted earlier with little change for a more fluffier texture. I also made a video for the same. The batter has an oreo cookie stuffed inside before baking. And the cream has the oreo crumbs in it. And finally, an oreo cookie tops the whole cupcake.
We are now on the third week of Bake-a-thon 2016. This week, I will be posting three cupcakes. To my pleasure, all the cupcakes turned out perfect and I was so happy. These were the first batch of recipes I made for this event. And the very first was made by my daughter. If you are my friend on FB, you might know that I celebrated my birthday on October and my daughter made me those cupcakes. And I have reserved them for this event on blog. My daughter being 10 years old, made thse cupcakes from scratch. And she also made those chocolate gems on top. I had some butter cream from the previous project and it went for the frosting.
Cream Cheese has been a rare ingredient for me as I don’t get it even in supermarkets at my place. So when I saw a recipe for making it at home, I immediately tried it. And it has been my go to recipe for a few years. But recently I found that there is a simpler recipe which produces the most smoothest cream cheese ever at home and I have already made two batches of it. So what do I do with all those cream cheese? I made cheese cakes, cup cakes and three different type of frostings ( video coming soon) and now I don’t have any of the cream cheese left. I think I will make it after two months. It has been an overload of cream cheese last month.
For the third week of this month’s blogging marathon, I have chosen the theme Wheat Flour Recipes. When I read wheat flour recipes, my mind always goes to bakes. Using wheat flour instead of maida in bakes is the latest trend. I have seen so many cake recipes using wheat flour instead of maida in cakes in social media. I have once tried a quick bread with wheat flour, but I didn’t like it very much. But those who are conscious of their health and their calorie intake find using wheat flour great. I don’t mind using wheat flour in breads as it gives a nice flavour to the bread. But for cakes, I am still skeptical.
After so many regional dishes this month, I just wanted to post something tasty as well as easy in the baking category. I so miss baking and my daughter misses it even more as she has been living without cakes for a month now. I really pity that poor girl. So one day when she wanted a cake for her snacks, I tried this easy MW chocolate cake for her. Many of my readers have been asking for MW recipes as I only post recipes done in OTG. By MW, I mean baking in microwave and not the convection mode. So if you have a basic microwave oven or a solo MW, you can bake this. The technical term would be cooking as MW cooks where as a OTG bakes. But the cake turned out just awesome and was completely done in 2 minutes.
For the second day of Breakfast dishes,we travel to America. As an Indian, I could never wrap my head around the concept of having sweet dishes for breakfast (except appam and idiyappam) but when I searched for American breakfast, I came across so many sweet dishes like quick breads, muffins, pancakes and so on. As muffins can be made in a jiffy, I selected to make a muffin. As you know I made a jar of home made peanut butter last week, I wanted to use it in the muffin. So I chose to do a peanut butter muffin with lots of chocolate chips.
This cake is among the moist cake category. The quantity given makes 16 cupcakes. As I had an order for 12, the other 4 cupcakes stayed at our home. I never ever give out cakes or cupcakes before test tasting it. So to make sure that it tasted good, I ate one. It was so moist and fudgy and was so soft. The cupcakes had uniform dome and I was so happy. But my husband who tasted it found it too moist. He likes it little drier. He says that they are like grated coconut and this sticks in the mouth. This is how he described the fudgy taste. But I never take his review into account when it comes to chocolate. Because I think I know it better than him.
