How many of you are fans of garlic? I have both love and hate relationship with garlic. I used to hate garlic for years and my mom used to pester me to eat it. I never budged. But now I love garlic and I find the aroma amusing. So when the theme for the monthly Bread Baker’s challenge was announced as garlic, I didn’t want to miss it. This is for the celebration of National Garlic Day in US on April 19th. Our host Karen of Karen’s Kitchen Stories wanted us to make breads including any of the mentioned garlics. Black garlic, white garlic, elephant garlic, smoked garlic, powdered, roasted, raw, crushed or whole! I didn’t know that there are so many varieties of garlic available.
If you are a regular reader, you might know that I am also doing an A-Z month long marathon on Tamil cuisine. Apart from that, I am in the middle of shifting my house. So I was in two minds whether to do this or not. But I still managed to make it today. This is my first bake in the new house. And I am pretty happy with the result. I am having this bread for breakfast and I am enjoying it so much. I made the dough yesterday and let it slow rise in fridge overnight. The original recipe asked for 24 hours of rise in fridge, but as I don’t have much time, I am satisfied with nearly 14 hours of rise in fridge. The first thing I did was to remove the dough from fridge in the morning and let it come to room temperature. I also made the oregano seasoning for the bread at home. I did some mistakes as I was juggling between making the bread and shifting the house, but have corrected the recipe after realising the mistakes. So read through the recipe twice before attempting. Make sure you don’t have any other work while working on the bread, else you will end up like me.
This is the oregano seasoning I made at home. For recipe, click on the picture below. I adapted the recipe from Bharatz Kitchen. The original recipe asked for kneading the seasoning with the flour, but I completely missed it. So I added it after the first rise. Any bread dough mustn’t be kneaded after the first rise. So make sure to add the seasoning while making the dough. Ad I slightly over baked the bread for I wanted that nice golden colour. But you can achieve it by placing the bread on the top rack for the last five minutes. You don’t have to over bake. I have used instant yeast, so I have added it directly into the flour. But if using dry yeast, then add sugar, yeast and 1/4 cup warm water and let it sit for 10 minutes until bubbly. Then add it to the flour and knead. This water is part of the water mentioned in the recipe. So reduce water while kneading the dough. I try to list out all my mistakes in each recipe so that you will not have to go through it again. Recipe Adapted From Bharatz Kitchen
Ingredients:
Maida/ All Purpose Flour – 2 1/2 + 1/2 cups
Sugar-1 tbs
Instant Yeast – 1 tsp
Salt- 1tsp
Olive Oil – 2 tbs
Butter – 2 tbs
Garlic – 3 whole / 12 pods / 1/4 cup
Water – 1 cup
Oregano Seasoning 1 tbs + some for sprinkling
Procedure:
In a bowl mix together 2 1/2 cups flour, sugar, salt, grated garlic, oil, butter, oregano seasoning and yeast.
Add water and make a sticky dough.
Now dust counter with the remaining flour and transfer the dough to counter.
Knead it for 10-15 minutes. The dough will be sticky, so keep on using the excess flour for dusting.
Use a dough scraper to knead the dough without messing your hand.
Once the dough is kneaded, apply some oil in a bowl, place the dough in it and rotate the dough so that oil coats the dough.
Cover with cling wrap and set it in fridge for slow rise for 24 hours.
Remove the dough from fridge and let it come to room temperature. It may take 2 hours.
Preheat oven to 200°C.
Now transfer dough to counter, dust with flour and press it to form a disc.
Divide it into 4 equal portions.
Press each portion into a circle and fold it over to form a semicircle.
Grease a tray with butter and sprinkle some oregano seasoning.
Place the semi circles on the tray and cover and set aside for 10 minutes.
Brush the top with milk and sprinkle the seasoning evenly on top.
With a knife, slash lines to make 1″ sticks.
Bake in the preheated oven for 15 minutes.
At the end of baking time, shift the tray to top rack to achieve the golden brown on top.
Serve it hot with any cheese dip or as it is.

Domino's Style Garlic Bread Recipe

Its 14 hours in the fridge and my stuff hasnt risen even half as much as yours.yours has doubled in 14 hours.am now waiting for the 24 hours mark but looks difficult!! I cant figure out what could have gone wrong
There can be only one problem that is with the yeast. If your yeast is good, the dough will behave good. Check your yeast..

Plan to tey this one. Could we store the remaining dough inthe fridge for a day so as to bake a few hours later.
Wrap the dough in cling film and refrigerate. Bring it to room temperature, shape and then proceed.

Thank you Monika for the wonderful feedback. If you are using the dough within three days, you can wrap it it cling and refrigerate it. Otherwise you need to freeze it.
